Potato Wedges

 Ingredients: - 5 medium-sized potatoes - extra virgin olive oil with pink pepper and rosemary (the oil I used contains 2% pink pepper) - sunflower oil with Chipotle pepper flavor - 1/4 teaspoon of ground cumin seeds - 3/4 teaspoon of chopped rosemary - finely ground sea salt - a mix of white, green, and black pepper (optional)

Potatoes are one of the most versatile ingredients in the kitchen, and the recipe we will explore today promises to transform this mundane food into a delicious and appealing dish. Start by washing the potatoes very well under running water, using a slightly abrasive sponge to remove any impurities or dirt. Alternatively, you can choose to peel them, although keeping the skin can add extra texture and nutrients to the final dish. I chose the peeled potatoes option, but you can do according to your preferences. After washing or peeling them, cut each potato in half, and then each half into two more pieces, so that you get potato quarters.

In a small bowl, prepare a mixture of extra virgin olive oil, pink pepper, and rosemary. If you are someone who loves spicy food, you can also add chili-flavored oil, but if you prefer a milder option, you can use only the olive oil with rosemary. I prefer to combine 4 tablespoons of olive oil with rosemary and 1 tablespoon of sunflower oil with chili flavor to achieve a balanced taste. It is important to adjust this mixture according to your personal preferences.

After obtaining the oil mixture, use a brush to evenly coat all the potato quarters, ensuring that each piece is well covered. Place the potatoes on a special tray for baking, ideally using a non-stick tray with a zig-zag or perforated base, which will allow for even baking and a crispy texture.

Next, you can prepare a spice mixture that will add an even more intense flavor. Grind some cumin seeds, add chopped rosemary and fine salt, and if you wish, you can include a mix of white, green, and black pepper. If you have already opted for the chili-flavored oil, it may not be necessary to add pepper, so adjust the spices to taste. Sprinkle this spice mixture over the prepared potatoes, ensuring they are well covered.

Now, preheat the oven to 180 degrees Celsius and place the tray with the potatoes inside. Let them bake for about 30-40 minutes or until they become golden and crispy. It is important to check them from time to time, maybe even turn them slightly to brown evenly on all sides. Once they are ready, take them out of the oven and let them cool slightly before serving. These roasted potatoes with flavored oil and spices are perfect as a side dish or even as a savory appetizer. Enjoy your meal!
