To prepare these delicious croissants, the beginning is essential. In a large bowl, combine the softened butter, egg yolks, yeast that has been dissolved in 20 ml of warm milk, salt, and flour. It is important to add the ingredients in the correct order to achieve a homogeneous texture. At first, only add 20 ml of milk, but do not hesitate to gradually add more milk depending on the desired consistency of the dough. Knead the dough until it becomes elastic and smooth, which should take about 10 minutes. If you feel that the dough is too dry, add a little milk, and if it is too wet, sprinkle a little more flour.

Once the dough has been properly kneaded, shape it into a ball and cover it with a kitchen towel, letting it rise in a warm place. It is recommended to let it rise for about an hour so that it doubles in volume. This step is crucial as the yeast will act, giving the dough a fluffy and airy texture. After it has risen, sprinkle a bit of flour on the work surface and place the risen dough.

Roll out the dough using a rolling pin until you achieve a uniform sheet of the desired thickness. Using a knife or a cutting wheel, cut triangular shapes. The size of the triangles depends on the size of the croissants you wish to make; usually, a triangle of about 10-12 cm is suitable. Roll each triangle from its base towards the tip, forming the croissants. If you want, you can slightly bend the ends of the croissants to give them a more appealing shape.

Prepare a large baking tray lined with parchment paper. Preheat the oven to a moderate temperature, around 180 degrees Celsius. Place the shaped croissants on the prepared tray, leaving a little space between them as they will rise during baking. Brush each croissant with beaten egg to achieve a golden and shiny crust. Finally, sprinkle sesame seeds on top, which will add a delicious taste and texture.

Bake the croissants for about 20-25 minutes until they become golden and fluffy. It is important to watch them in the last minutes of baking to avoid burning. Once they are ready, take them out of the oven and let them cool, covered with a thin kitchen towel, at room temperature. This will retain moisture and prevent them from drying out. The croissants are now ready to be served, warm or at room temperature, and are perfect to be enjoyed alongside a cup of tea or coffee.
