### Ingredients:
- 1 package of cream wafers (approximately 200 g)
- 3 eggs
- 1.5 l milk
- 3 packets of vanilla pudding (approximately 90 g)
- 3 tablespoons of flour
- 150 g butter (at room temperature)
- 200 ml Hulala whipped cream
- 6 tablespoons sugar
- 2 large, ripe pears for caramelizing
- 50 g sugar for caramelizing the pears
- 1 teaspoon lemon juice (for pears)
### Preparation Steps:
1. Preparing the pudding cream:
- Start by boiling 1 l of milk in a saucepan over medium heat. It is important to stir occasionally to prevent sticking.
- In a separate bowl, combine the pudding packets, sugar, flour, and 3 egg yolks. Mix well until you obtain a smooth paste.
- Gradually add the remaining 0.5 l of milk to the egg and flour mixture, stirring constantly to avoid lumps.
2. Boiling and thickening the cream:
- When the milk in the saucepan begins to boil, pour the pudding mixture over it, stirring continuously. Let it boil for about 2-3 minutes or until the cream thickens.
- Once thickened, remove the cream from the heat and let it cool slightly. It is essential that it is warm when you add the butter.
3. Adding the butter and egg whites:
- Cut the butter into cubes and incorporate it into the warm cream, mixing well with a mixer to achieve a smooth texture.
- In another bowl, beat the 3 egg whites with a pinch of salt until you obtain a firm foam. Gradually add the egg white foam to the pudding cream, gently folding with a spatula to maintain airiness.
4. Assembling the dessert:
- Place the first layer of cream wafers on a platter. Spread the pudding cream evenly on top.
- Whip the cream and spread it over the pudding, then place the second layer of cream wafers on top.
- For added texture, crumble the second layer of cream wafers and sprinkle the pieces on top.
5. Caramelizing the pears:
- In a skillet, add 50 g of sugar and let it caramelize. When the sugar turns golden, add the sliced pears and lemon juice. Caramelize them on each side for 2-3 minutes until they become golden and tender.
6. Finalizing and serving:
- Let the dessert chill in the refrigerator for 1 hour to set. Serve slices of pudding cream topped with caramelized pears for a delicious contrast of textures and flavors.
### Practical Tips:
- Make sure all ingredients are at room temperature to facilitate mixing.
- If you want a healthier version, you can replace the butter with coconut oil or use plant-based milk.
- You can also add some toasted nuts for extra crunch.
