Cucumber Gazpacho

 Ingredients: 3 cucumbers, 100 ml yogurt, 2-3 sprigs of fresh parsley, 2 green onions, 2-3 mint leaves, 3-4 arugula leaves, 1 clove of garlic, 1 teaspoon lemon juice, 2 tablespoons olive oil, salt, ground pepper, cottage cheese

Gazpacho is a cold soup of Spanish origin, perfect for hot summer days. We start by preparing the essential ingredients to achieve a tasty and refreshing dish. Cucumbers are the stars of this recipe, so we choose a few fresh and crunchy cucumbers. We begin by carefully peeling them, as we want the final texture to be smooth and pleasant. Then, using a spoon, we scoop out the seeds, as these can make the soup too watery. After peeling the cucumbers, we chop them into small cubes to facilitate further blending.

The next step is to handle the garlic and green onion. Garlic adds an intense flavor, so we make sure to chop it finely and evenly for perfect integration into the mixture. The green onion, with its tender green stalks, is sliced thinly, and the fresh herbs, whether parsley or dill, are chopped lightly to avoid turning them into paste.

In a blender, we combine the chopped cucumbers, green onion, herbs, extra virgin olive oil, and natural yogurt. The olive oil will add a note of creaminess, while the yogurt will provide a refreshing and slightly tangy taste. This time in the fridge is essential as it allows the flavors to blend perfectly. Before serving, we prepare the cottage cheese, which we portion into small balls. These cheese balls will add a creamy texture and a delicious taste to each serving of gazpacho.

When we are ready to serve, we take the gazpacho out of the fridge and pour it into bowls. On top, we carefully place a cheese ball, and for an even more attractive appearance, we can add a few fresh herb leaves.
