Bean Soup

 Ingredients: I- smoked ham from the pig received from my grandfather; - smoked ribs... same thing; - half a kg of beans from the market; - a large carrot; - 2 bay leaves; - 2 tablespoons of flour; - 750 ml of sour cream from the market or from grandma's cow; - an onion; - 2 tablespoons of oil; - a tablespoon of Maggi seasoning.

To prepare a delicious soup with smoked ham and beans, it is essential to organize ourselves before starting the cooking process. In this recipe, we will focus on achieving a soup rich in flavors and textures that will delight any meal. We start by preparing the ingredients the night before. We cut pieces of smoked ham and bacon, which we will soak in a bowl of water, letting them sit overnight. This will help reduce the intensity of the saltiness and make the meat juices less salty.

The next morning, we take care of the beans. This will require a soaking stage, so we put them in a bowl of water for about an hour and a half to hydrate properly. While the beans are soaking, we prepare to boil. In a large pot, we put the pieces of smoked ham and bacon to boil, without adding salt, as the meat already contains enough salt. It is important to taste the broth at the end to adjust the salt level.

Once the meat starts to boil, we add the diced carrot and the two bay leaves, which will enrich the soup's flavor. Meanwhile, we put the beans in another pot and boil them until they become soft but not overcooked. Once the beans are ready, we drain them and add them to the pot with the ham and bacon.

To thicken the soup and give it a special creaminess, we prepare a mixture of two tablespoons of flour and about four tablespoons of sour cream. We mix the ingredients well with a fork until we get a smooth paste. Then, we add the remaining sour cream, continuing to stir so that no lumps remain.

Towards the end of cooking, we add this creamy mixture to the pot with the soup, letting it come to a boil for two or three times. This will make the soup richer and more consistent.

In another step, we take care of the onion. We chop it to our liking and put it in a clean towel, which we fold, giving it a few energetic punches. This trick helps reduce the acidity of the onion, providing a more pleasant taste to the soup. We place the onion in a bowl, add two tablespoons of oil and seasoning to taste, mixing well to combine the flavors.

Finally, we serve the soup hot, garnished with the prepared onion, enjoying a comforting dish full of flavor and tradition. This soup is perfect for cooler days, bringing a touch of warmth to our souls.
