Mint and Dark Chocolate Cake
We start the culinary adventure with a delicious cake recipe that will bring a touch of joy to any moment of the day. In a generous bowl, we will combine the basic ingredients, starting with fine flour, which will provide the structure of our cake. We add fresh eggs, which will bring extra moisture and contribute to a fluffy texture. We don't forget the granulated sugar, which will add sweetness, as well as the creamy yogurt, which will make the cake softer and airier.
To add a touch of originality, we include poppy seeds, which will not only enrich the aroma but also add an attractive appearance. Mint syrup will bring a special freshness, and sunflower oil will ensure a fine and even dough. We also add vanilla sugar for a sweet and inviting fragrance, as well as baking powder, essential for achieving a fluffy cake. We mix all the ingredients well until we obtain a fluid, homogeneous dough that will be the delicious base of our cake.
While preparing the dough, we take care of the chocolate, which we cut into generous pieces to melt beautifully during baking. We preheat the oven to 190°C, prepare the baking tray, which we line with wet and well-wrung baking paper for better adherence. If we don't have a non-stick tray, we ensure that its sides are greased with butter and sprinkled with flour, so we can easily remove the cake after baking.
We carefully place the pieces of chocolate at the bottom of the tray, then pour the dough evenly over them, ensuring that the chocolate pieces are well covered. The tray should measure 33 cm x 22 cm for optimal results, but even if we use a larger tray, the cake will still be just as tasty. We bake the cake in the preheated oven for 30-40 minutes, until it turns golden, and we test it with a toothpick to make sure it is ready.
Once the cake has cooled, we carefully turn it onto a rectangular platter, removing the baking paper. We dust it with vanilla sugar, a detail that will add a touch of elegance. We cut it into desired shapes, whether squares or diamonds, and serve it with pleasure. It is a slightly sweet, refreshing cake, but it can be adjusted according to preferences by reducing the amount of sugar. This recipe promises to be a guaranteed success, bringing smiles and unforgettable moments around the table.
Ingredients: 3 eggs, 300 g flour, 180 g natural yogurt/vanilla (I used buttermilk), 280 g sugar, 130 ml mint syrup, 60 g poppy seeds (it was supposed to be coconut but I didn't have any), 80 g sunflower oil, 1 packet of vanilla sugar or 1/2 vial of vanilla, 1 packet of baking powder, 250 g dark chocolate (I only had 200 g).
