- 250 ml warm milk
- 1 packet (7 g) dry yeast
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 100 ml sunflower oil
- 150 g tahini (sesame paste)
- 1 egg (for brushing)
- Optional: sesame seeds for decoration
Preparation:
1. Activating the yeast: In a small bowl, combine the dry yeast with a few tablespoons of the warm milk and 1 tablespoon of sugar. Mix well and let the mixture sit for 5-10 minutes until it becomes frothy. This step is essential for activating the yeast and achieving a fluffy bread.
2. Making the dough: In a large bowl, sift the flour and add the salt. Make a well in the center and pour in the activated yeast mixture, the remaining warm milk, and the sunflower oil. Mix the ingredients with a wooden spoon or your hands until you obtain a homogeneous dough.
3. Kneading: Place the dough on a lightly floured work surface and knead for about 10 minutes until it becomes elastic and smooth. If the dough is too sticky, you can add a little flour, but be careful not to overdo it to avoid a dry dough.
4. Rising: Place the dough in a bowl greased with a little oil, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
5. Filling: Once the dough has risen, roll it out on a floured surface into a rectangular sheet about 1 cm thick. Spread tahini over the entire surface, leaving a 1 cm edge on all sides. You can also add a thin layer of sugar for a sweet taste and a crunchy texture.
6. Shaping the spiral: Roll the dough tightly, starting from one short side, to form a cylinder. Cut the cylinder into slices about 3-4 cm thick and place them in a baking tray lined with parchment paper, leaving a little space between them to rise.
7. Second rising: Cover the spirals with a towel and let them rise for another 30 minutes. This will make the spirals even fluffier and airier.
8. Baking: Preheat the oven to 180°C. Brush the spirals with beaten egg for a golden crust, and if desired, sprinkle sesame seeds on top. Bake the spirals for 25-30 minutes or until golden brown and they sound hollow when gently tapped on the bottom.
9. Serving: Let the spirals cool slightly before serving. They are delicious warm but can also be enjoyed cold. Serve them plain or with a yogurt and dill sauce for a contrast of flavors.
