Preparation Steps

1. Preparing the base

We start by preparing the base, which will form the delicious foundation of our cake. In a large bowl, whisk the 5 eggs together with the 175 g of sugar until the mixture becomes frothy and light in color. This step is essential for achieving a fluffy and airy base.

Next, we add the flour mixed with cocoa and baking powder. It is important to sift these ingredients to avoid lumps. Gently fold in using an up-and-down motion with a spatula to keep the air in the mixture.

Finally, we incorporate the melted but cooled butter, mixing gently again. We pour the obtained mixture into a cake pan lined with baking paper and bake in a preheated oven at 200°C for about 30 minutes. When the base is ready, we let it cool in the pan for 10 minutes, then remove it and let it cool completely on a rack.

2. Preparing the mousse

While the base cools, we take care of the mousse. In another bowl, whisk the 2 egg yolks with 30 g of sugar until creamy. Separately, whisk the egg whites until foamy, then add the remaining 30 g of sugar and continue mixing until we obtain a firm meringue.

Melt the chocolate in a double boiler or microwave, being careful not to burn it. Once melted, let the chocolate cool slightly, then mix it with the 50 g of strong coffee. This combination will give the mousse a deep flavor and intense taste.

Add the diluted chocolate to the egg yolk mixture and mix well. Then, gently fold in the whipped egg whites and whipped cream, being careful not to lose the air in the mixture. If desired, you can add a splash of rum essence to the coffee for extra flavor.

Let the mousse cool in the refrigerator for about 30 minutes to thicken.

3. Preparing the glaze

For the cocoa glaze, place water, liquid cream, sugar, and cocoa in a saucepan. Bring the mixture to a boil over medium heat for 8-10 minutes, making sure the temperature does not exceed 104°C. Using a kitchen thermometer is essential to achieve a perfect glaze.

After boiling, let the glaze cool to 50°C, then add the gelatin soaked in cold water. Mix well until the gelatin completely dissolves and let the glaze cool to 35°C before using.

4. Assembling the cake

Now that all components are ready, it’s time to assemble the cake! We divide the base into two equal parts. We soak the first part with a syrup made from water, sugar, and, if desired, a bit of rum for a more intense flavor. Over the soaked base, we spread the mousse evenly, then add the second part of the base. We soak this one too, then pour the cocoa glaze over, making sure to distribute it evenly across the entire surface of the cake.

5. Decorating the cake

For an elegant look, you can decorate the cake with grated chocolate, caramelized nuts, or fresh fruits like raspberries or strawberries, which will add a touch of freshness and color. We let the cake cool in the refrigerator for at least 2 hours before cutting, to allow the mousse to set perfectly.

Practical Tips and Variations

- Calories and Nutritional Benefits: Each slice of cake contains approximately 400-450 calories, depending on the ingredients used. Milk chocolate adds a high content of antioxidants, while coffee provides a natural boost. Consumed in moderation, this dessert can be part of a balanced diet.

- Ingredients: Always use high-quality ingredients, especially chocolate, to achieve the best flavors. Dark chocolate can be a healthier alternative, offering a more intense taste.

- Fruit Variation: You can add pieces of fresh fruit (e.g., raspberries or cherries) to the mousse for a fruity note. This will create a pleasant contrast between chocolate and the acidity of the fruits.

- Serving: This cake pairs perfectly with a warm drink like cappuccino or herbal tea. Also, vanilla ice cream alongside a slice of cake will create an unforgettable dessert!
