Delicious Zwetschgendatschi Recipe (Plum Cake)
If you're looking for a quick and delicious dessert, the Zwetschgendatschi recipe, a classic plum cake from Germany, is the perfect choice. This cake filled with juicy and aromatic plums will surely impress anyone who tastes it. Moreover, it is very versatile, and you can also use other fruits like peaches, apricots, or sour cherries.
Total time: 1 hour
Preparation time: 20 minutes
Baking time: 30 minutes
Servings: 12
Ingredients:
- 150 grams of cottage cheese
- 6 tablespoons of oil (preferably sunflower or canola oil)
- 1 egg
- 4 tablespoons of milk
- 80 grams of sugar
- a pinch of salt
- 1 packet of vanilla sugar (about 10 grams)
- 350 grams of flour
- 1 teaspoon of baking powder (about 16 grams)
- 20 grams of butter or margarine for greasing the pan
- 1 kilogram of plums (pitted)
- 30 grams of melted butter for glazing
- 5 tablespoons of sugar
- a pinch of cinnamon (optional)
Preparation steps:
1. Preheat the oven to 200 degrees Celsius. Make sure you have everything ready: a medium-sized baking pan (about 30x40 cm) and the ingredients.
2. In a large bowl, combine cottage cheese with oil, egg, milk, sugar, salt, and vanilla sugar. Use a whisk or mixer to achieve a smooth mixture. Ensure that the cottage cheese is well mashed to avoid lumps.
3. In another bowl, sift the flour together with the baking powder. Add the cottage cheese mixture and mix well with a spatula or by hand until you get a soft and slightly sticky dough. If the dough is too sticky, you can add a little extra flour.
4. Grease the pan with the 20 grams of butter or margarine. Spread the dough evenly in the pan using a rolling pin or, if you have difficulty, a beer bottle. Make sure the dough covers the entire surface of the pan evenly.
5. Wash the plums, remove the pits, and cut them in half. Place them on the dough as densely as possible, with the cut side up. This will allow the plums to caramelize beautifully during baking.
6. Place the pan in the preheated oven and bake the cake for about 30 minutes or until the dough turns golden and the plums are caramelized on top.
7. As soon as the cake is done, remove it from the oven and brush the plums with the 30 grams of melted butter using a pastry brush. This will add extra flavor and make the cake shine.
8. In a small bowl, mix the 5 tablespoons of sugar with cinnamon (if you want to add a fragrant taste) and sprinkle the mixture evenly over the cake.
9. Let the cake cool slightly, then cut it into squares or rectangles and serve it warm or at room temperature. It is delicious both on its own and alongside a scoop of sour cream or vanilla ice cream.
Useful tips:
- You can experiment with other fruits, such as peaches or apricots, to create interesting variations of this cake.
- If you can't find cottage cheese, you can use ricotta or low-fat cottage cheese.
- The cake can be stored in the fridge for a few days, but it is best enjoyed within the first 2 days to savor the freshness of the fruits.
Enjoy this Zwetschgendatschi recipe and indulge in a simple yet spectacular dessert. Bon appétit!
