Muffins for Breakfast
Preheat the oven to high heat, at 200 degrees Celsius (400 Fahrenheit), to ensure even and quick baking of the muffins. Next, grease the muffin pan with oil to prevent the batter from sticking. An alternative option would be to use paper muffin liners, which can further facilitate the serving process. The prepared pan is set aside, and we turn our attention to the ingredients.
To achieve a perfect batter, it is essential to measure the ingredients accurately. Therefore, weigh 280 grams of flour, along with the sugar, baking powder, and baking soda. These ingredients are mixed well in a large bowl, ensuring there are no lumps and that the baking powder is evenly distributed. This mixture will form the fluffy base of our muffins.
In another bowl, the egg is lightly beaten with a fork, then the Greek yogurt is added, which brings extra creaminess and flavor. It is important to use Greek yogurt, as it contributes to the slightly moist texture of the muffins. Next, add the buttermilk, which will help enrich the flavor and maintain moisture, followed by the oil or melted butter, which adds a delicious aroma.
A well in the center of the dry ingredient mixture is formed, and the egg and yogurt mixture is poured into it. Using a fork, everything is mixed together, keeping in mind that the batter will have a denser appearance with small lumps, which is perfectly normal and indicates that we are on the right track.
After the batter is combined, add the blueberries, which can be fresh or frozen, depending on your preference. This is the stage where a splash of color and sweetness is added, and the mixture is gently combined to avoid crushing the fruit.
Fill the muffin cups to 3/4 full to yield 12 delicious muffins. If you want larger muffins, you can fill them a bit more, but in this case, you will get only 10 pieces. Once you have filled the cups, they are placed in the preheated oven and baked for about 15 minutes, until they are golden and fluffy.
For a perfect taste, these muffins are served warm, alongside a layer of butter and blueberry or blackberry jam, which enhances the flavors and makes them irresistible. Additionally, these delicious muffins can be frozen in individual portions to be enjoyed later. When you want to consume them, simply heat them in the microwave for 20-30 seconds, and you will have a quick, flavorful breakfast or snack.
Ingredients: 1 and 1/2 cups of whole wheat flour, 1/2 cup of white flour, 3 heaping tablespoons of brown or white sugar, 1 and 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 2 beaten eggs, 3/4 cup ricotta cheese (sour cream or Greek yogurt - approx. 4 heaping tablespoons), 3/4 cup buttermilk (180-185 ml), 2 tablespoons of melted butter or oil, 3/4-1 cup of fresh/frozen blueberries or 1/2 cup of dried blueberries.
