Bean Soup with Beetroot and Smoked Ham

 Ingredients: 1 piece of smoked pork hock 200 g fresh pork belly 2 cans of boiled beans 1 piece of white onion 1 piece of red bell pepper 1 piece of parsley root 4-5 carrots 2 pieces of red beet 1/4 piece of celery root 2 tablespoons of tomato paste 1 sprig of thyme 1 teaspoon of grated horseradish salt, pepper

The ham hock and the bacon are washed very well under a stream of cold water, taking care to remove any impurities or residues. After cleaning them, we cut them into smaller pieces to cook evenly and to spread the aroma throughout the soup. We place them in a large pot, add enough water to completely cover them, and turn the heat up high to bring everything to a boil. In the meantime, we prepare to remove the foam that forms on the surface, to achieve a clear and appetizing final result.

Meanwhile, we focus on the vegetables that will add flavor to the dish. The onion is peeled, then finely chopped, ensuring that we get uniform pieces for even cooking. The fresh and fragrant bell pepper is cleaned of its stem, washed, and cut into cubes, adding a vibrant color and a sweet taste. The carrots, parsley root, and celery root are carefully peeled and also cut into cubes, providing a flavorful and hearty base. The beetroot, with its rich hue, is peeled and can be diced or, for a more interesting appearance, grated with large holes.

Once the meat is almost cooked, we add all the chopped vegetables to the pot and let everything boil together, so the flavors blend harmoniously. At this point, it’s good to take care of the beans. If we are using canned beans, we drain and rinse them under a stream of cold water to remove excess salt or preservatives. When all the ingredients are cooked and well integrated, we add the beans, salt, and pepper to taste, then we add a tablespoon of tomato paste, which will enhance the color and flavor of the dish. A sprig of fresh thyme and grated horseradish add a note of freshness and a slight spiciness.

The dish is served hot, ideally accompanied by thinly sliced red onion, which will bring a pleasant contrast of textures and flavors. On top, we sprinkle a little fresh thyme for a final aromatic detail. This dish is perfect to be enjoyed with loved ones, bringing warmth and joy in every serving.
