Dill Soup with Dumplings
Ingredients: 1 larger bunch of dill, 1 liter of water, 100 g sour cream, 1 tablespoon of flour, 50 g butter, 2 eggs, 150 g semolina, Salt to taste
In a large frying pan, we put 50 grams of butter and let it melt over medium heat. Once the butter has completely melted, we add 2 tablespoons of wheat flour and stir constantly to obtain a golden roux, which will give a creamy texture to the soup. This step is essential, as the flour will thicken the soup and add a pleasant flavor. While the roux is cooking, we take care of the dill. We take a fresh bunch of dill, wash it well, and chop it finely so that the flavors are released into the dish. After the roux has taken on a golden hue, we add the chopped dill and mix well to combine the flavors, letting it sauté for about 5 minutes.
After the dill has softened, we begin to gradually add 1 liter of warm water, stirring continuously to prevent lumps from forming. Once we have added all the water, we pour the mixture into a larger pot, which will become the base of our flavorful soup. Now we turn our attention to preparing the dumplings. In a bowl, we crack a whole egg and add the egg white from another egg, along with 100 grams of semolina and a pinch of salt. To achieve fluffier dumplings, it is recommended to add half a teaspoon of baking soda. We mix everything well until the mixture becomes homogeneous and easy to shape.
Using a teaspoon, we form the dumplings and carefully add them to the boiling soup. If we notice that the dough is not firm enough, we can add more semolina, thus adjusting the texture of the dumplings. We let them boil over medium heat for 10 minutes, with the lid on, to allow the dumplings to puff up and become fluffy. In the meantime, we take the remaining egg yolk and mix it with 200 grams of sour cream, making sure to obtain a uniform mixture. As we mix, we gradually start adding the hot soup so that the temperature does not coagulate the yolk.
After we have well integrated the sour cream and yolk mixture into the soup, we let the dish simmer for a few minutes to develop its flavors. Finally, it is important to taste the soup and add salt to taste, ensuring that every bite is perfectly seasoned. The semolina dumpling soup is now ready to be served, and the fresh aroma of dill will fill the house with an inviting scent. Enjoy your meal!
