In a deep frying pan, we can heat 2-3 tablespoons of olive or sunflower oil, depending on our preferences. Once the oil is well heated, we add the chopped vegetables, starting with the onion and carrots, as they require a longer cooking time. If you are using more tender zucchini, it is recommended to add them later, after the other vegetables have softened well. This step will help maintain their crunchy texture and fresh taste.
