Lemon Sorbet
To create a delicious lemon granita, we will start by preparing the sugar syrup, essential for achieving a smooth and flavorful texture. In a container, we combine water with sugar and stir with a spoon until the sugar completely dissolves, forming a sweet syrup. This syrup will add a touch of sweetness to the sour lemons, perfectly balancing the flavors.
Once the syrup is ready, we turn our attention to the lemons. We take a few fresh lemons and wash them well under running water. Using a fine grater, we grate the lemon peel, being careful not to touch the white part, as it can give a bitter taste. The grated peel will bring an intense fragrance and a vibrant flavor to our granita. After obtaining the peel, we use a sharp knife to remove the white skin from the lemons until we reach the juicy pulp.
Once the lemons are cleaned, we cut them into small cubes to facilitate the blending process. We put the lemon cubes into a blender and mash them until we obtain a smooth and homogeneous puree. It is important that the puree is as smooth as possible so that the granita has a pleasant texture. After obtaining the puree, we add the grated lemon peel and mix well.
The lemon puree mixture and syrup are poured into a plastic mold, which we place in the freezer. We let it cool for two hours, and then, to prevent ice crystals from forming, we take the mold out of the freezer. Using a fork, we gently scrape the surface of the granita, breaking up the formed ice crystals. This process will help the granita become fluffier and airier. We reintroduce the mold into the freezer for another hour.
After this period, we repeat the scraping process with the fork or, if we want a finer texture, we can use the blender again to achieve a uniform mixture. Thus, the granita will acquire a delicious and refreshing consistency, perfect for hot summer days. Finally, we serve the granita in chilled cups and, if we wish, we can decorate it with thin slices of lemon or fresh mint leaves for an extra touch of flavor and an attractive appearance. This simple yet refined recipe will surely impress everyone who tries it!
