Ingredients:
- 250 g phyllo dough (about 12 sheets)

- 1 teaspoon ground cinnamon
- 250 ml water
- 200 g sugar for syrup
- 1 teaspoon vanilla extract (optional)
- 1/2 lemon (juice)

Preparation:
1. Preheat the oven to 175°C (350°F). It is essential to have the oven well heated before placing the baklava inside to achieve even baking and a crunchy texture.

2. In a pan, melt the butter over low heat. Once fully melted, remove from heat and let it cool slightly.

3. In a bowl, mix the ground nuts with 150 g of sugar and cinnamon. You can use a food processor to chop the nuts, being careful not to turn them into powder, but to keep small pieces to add texture to the baklava.

4. Grease a baking dish with 2 tablespoons of melted butter. Place the first sheet of phyllo dough, brush it with butter, and repeat this process for another 5 sheets. It is important to brush each sheet, as this step will ensure the final crispiness of the dessert.

5. Add a layer of the nut and sugar mixture, then repeat the process of adding and brushing the phyllo sheets. Continue to alternate layers of sheets and filling, finishing with 6 sheets of phyllo on top, all brushed with butter.

6. Use a sharp knife to cut the baklava into diamonds or squares, ensuring that you cut all the way to the bottom of the dish. This technique will help the syrup penetrate the dessert better.

7. Bake the baklava in the preheated oven for about 40-45 minutes, or until it becomes golden and crispy. It is important not to open the oven in the first 20 minutes to allow for even baking.

8. Meanwhile, prepare the syrup. In a small saucepan, combine 250 ml of water, 200 g of sugar, the juice of 1/2 lemon, and, if desired, the vanilla extract. Boil over low heat for 10 minutes, stirring constantly until the sugar is completely dissolved. Let the syrup cool.

9. After the baklava is baked, pour the warm syrup over it, ensuring that each portion is well covered. Let the baklava sit for at least 2 hours, ideally overnight, to allow the syrup to absorb.

10. Serve the baklava cold or at room temperature, as a refined dessert after a hearty meal. You can garnish it with some crushed nuts on top or a teaspoon of honey for an extra touch of sweetness.
