For the cream:
- 1 packet of vanilla cream Dr. Oetker
- 250 ml of milk
- 3 tablespoons of sugar
- 250 ml of liquid cream
For the filling:
- 1 can of peaches (approximately 400 g)
For decoration:
- Whipped cream (approximately 200 ml)
- Food coloring (red and white)
Step by step for a perfect cake:
1. Preparing the sponge: Start by separating the egg whites from the yolks. Use a large, clean bowl to beat the egg whites with a pinch of salt until they form stiff peaks. Gradually add the sugar, continuing to mix until you achieve a glossy meringue.
2. Adding dry ingredients: In another bowl, combine the yolks with the flour, baking powder, and cocoa. Gently fold this mixture into the meringue using a spatula with light bottom-to-top movements to retain the air in the batter.
3. Baking the sponge: Prepare a round baking pan (26 cm in diameter) with parchment paper. Pour the batter into the pan and bake at 180°C for 25 minutes or until the sponge is firm to the touch. Let it cool completely.
4. Preparing the cream: In a bowl, mix the vanilla cream with the milk and sugar according to the package instructions. Whip the liquid cream until it becomes firm and carefully fold it into the vanilla cream, resulting in a fluffy mixture.
5. Assembling the cake: Cut the cooled sponge into two equal halves. Soak each half with the juice from the peach compote to add moisture and flavor. On the first layer, spread a generous layer of cream, followed by diced peaches. Add another layer of cream and place the second sponge on top.
6. Decorating: Cover the cake with the remaining cream and, using whipped cream, create an adorable Santa Claus on the surface of the cake. You can use red food coloring for his hat and coat and white for his beard and snow. Every detail counts!

We prepare the cream according to the instructions on the package. We whip the cream until fluffy. We mix the cream with the whipped cream. We cut the cake into 2 layers, soak it with the juice from the peach compote. We put a layer of cream, then diced peaches, another layer of cream, the second cake layer, which we soak, add cream, and try to decorate it with whipped cream in the shape of Santa Claus (mine isn't exactly successful, but I tried).
