Step by step:

1. Preparing the yeast
Start by activating the yeast, an essential element for achieving a fluffy dough. In a small bowl, combine 3 tablespoons of lukewarm milk, 2 tablespoons of sugar, and the yeast. Gently mix until the yeast dissolves. Cover the bowl with a clean towel and let it sit for 15 minutes until it becomes frothy.

In a bowl, beat the 3 eggs with a little oil and sugar, then pour the mixture over the cheese filling, making sure to brush the dough on top as well. Preheat the oven to 180°C and bake the pastry for 45-50 minutes or until it turns golden and firm to the touch.
