Azuki Bean Soup with Pumpkin

 Ingredients: -500 grams of organic Azuki beans -1 kg of organic pumpkin -4 organic bay leaves -2 liters of organic vegetable soup -4 carrots -4 tablespoons of organic white miso paste -2 teaspoons of curry -1/4 teaspoon of chili -2 bunches of fresh parsley

To prepare a nutritious and delicious soup with Azuki beans, the first step is to soak the beans, preferably overnight, but at least 6-8 hours. This process helps soften the beans and reduces the cooking time. After soaking the beans, rinse them well under cold running water and then place them in a large pot with 2 liters of fresh water, adding a few bay leaves for extra flavor. Once the water starts to boil, reduce the heat, cover the pot with a lid, and let the beans simmer on low heat for 40 minutes until they become soft but still retain their texture.

Meanwhile, we take care of the pumpkin. We peel the pumpkin and cut it into cubes of about 2 cm to cook evenly. Once the beans are almost ready, we add hot vegetable broth to the pot along with the pumpkin pieces. We let everything boil together for 20 minutes until the pumpkin becomes tender and releases its flavor into the soup.

Next, we prepare the carrots. We peel the carrots and cut them into small dice to cook quickly and evenly. After the 20 minutes, we add the carrots to the pot along with the chopped chili pepper and curry to bring a touch of spiciness and exotic flavor. We let it boil for 5-10 minutes until the carrots become tender but still maintain a pleasant texture.

To give the soup a deep flavor, we dissolve 4 tablespoons of miso paste in a small bowl, using a little hot broth to thin it out. Then, we add the miso mixture to the pot, stirring well. We let the soup simmer on low heat for a minute so that the flavors combine perfectly. Finally, we add the chopped fresh parsley, which will add a note of freshness and color.

Now, the delicious healthy soup is ready to be served! It is ideal to be enjoyed alongside a slice of whole grain bread or simply as it is, for a comforting lunch. I wish you a good appetite and enjoy every spoonful!
