To prepare this delicious recipe for cannelloni with mushrooms and white sauce, we start by making sure we have all the ingredients at hand. You will need a medium onion, a few cloves of garlic, fresh mushrooms (preferably champignon or forest mushrooms for a more intense flavor), ripe tomatoes, tomato juice, milk, flour, grated cheese, olive oil, salt, pepper, basil, and oregano.

Start by finely chopping the onion and sautéing it in olive oil in a deep pan over medium heat. Let the onion become translucent, about 5 minutes. Then, add the finely chopped garlic and stir, letting it release its flavors for a minute. Now, add the chopped mushrooms, covering the pan with a lid to allow the mushrooms to release their juices. When the mushrooms have softened, add the chopped tomatoes and season with salt, pepper, basil, and oregano, letting the mixture simmer gently to blend the flavors.

Meanwhile, prepare the red sauce by combining the tomato juice with a pinch of salt, basil, and oregano, diluting it with a little water. This sauce will serve as the base for the cannelloni, so ensure it has a balanced and pleasant taste. Pour the sauce into the baking dish, making sure it is evenly distributed.

In a separate pot, bring the milk to a boil with a little salt. When it starts to boil, mix the flour with a few tablespoons of this hot milk to avoid lumps. Gradually add the flour mixture to the boiling milk, continuing to stir. Let the sauce thicken over low heat until it reaches a consistency similar to liquid cream. Once the sauce is ready, remove it from the heat and add your favorite spices, as well as 2-3 tablespoons of grated cheese for extra flavor.

Now it's time to assemble the cannelloni. Fill each tube with the mushroom mixture, then carefully place them in the sauce in the dish, being careful not to break them. If you have any filling or sauce left, don't waste it; pour it over the cannelloni tubes. The last step is to cover everything with the white sauce obtained, then generously sprinkle grated cheese on top. Cover the dish with aluminum foil or a lid and place it in the oven at 180 degrees Celsius for about 30 minutes.
