We start by preparing the vegetables that will add flavor to our stew. The onion is sliced julienne, making sure the slices are thin so that they sauté evenly and spread their aroma throughout the dish. Then, the celery is grated, which will add an interesting texture to the dish. The carrot, an essential ingredient, is cut in half and then into thin slices, so it cooks quickly and releases its juice. All these chopped vegetables are mixed in a large bowl with olive oil, sweet paprika, and a little water, after which the mixture is transferred to a pot over low heat.

Meanwhile, we take care of the mushrooms. They are cut into quarters, considering their small size, to integrate perfectly into the composition. When the vegetables in the pot begin to simmer gently, we add the chopped mushrooms, along with the pitted olives, which will add a salty note and a distinct flavor. We continue to carefully mix the ingredients so that the flavors combine.

After a few minutes, when the mushrooms start to soften and release their juice, we add the potatoes, which have been cut into larger pieces to cook more evenly and not fall apart. The potatoes will add substance and make the stew more filling. All the vegetables are allowed to simmer over medium heat, being careful to stir occasionally so they do not stick to the bottom of the pot.

When the vegetables are well cooked, it is time to add the favorite spices, such as salt, pepper, and maybe even a splash of herbs. This vegetable stew should be more juicy, so if we notice that the water has evaporated too much, we can add a little warm water gradually, stirring constantly to achieve the desired consistency. After adjusting the taste and texture, we stop cooking, letting the dish rest for a few minutes to concentrate its flavors. This stew is served warm, alongside a slice of fresh bread, and will surely bring a smile to the faces of loved ones.

 Ingredients: 1 liter of water, 6 carrots, 3 onions, 1 medium celery, 300g mushrooms, 3 potatoes, 50g olives, 150ml oil, pepper, seasoning to taste, 2-3 tablespoons sweet paprika.
