To prepare a delicious rice stew, the first step is to gather the necessary ingredients. We start by finely chopping the onion, making sure each piece is uniform for even frying. We will use sunflower or olive oil, depending on preferences, but it is important to have enough to cover the bottom of the pan. The onion is sautéed over medium heat until it becomes glassy and fragrant, being careful not to let it burn, as this could give a bitter taste to the dish.

Once the onion has taken on a golden hue, we add the bell pepper or sweet pepper cut into small cubes. Here, choosing between red or green bell pepper can influence not only the appearance but also the final taste of the stew. We let the vegetables sauté together for 2-3 minutes, stirring occasionally to ensure they cook evenly. Then, we intervene with the tomatoes, which we have peeled and deseeded, cutting them into large cubes. These will add juiciness and a special flavor to the composition.

After adding the tomatoes, we let everything simmer on low heat for another 2-3 minutes. It’s time to add the rice to the pot, mixing well to coat it in the flavors of the vegetables. We add water, being careful to pour it gradually, just enough to cover the rice without overdoing it. It is essential to stir constantly to avoid the rice sticking to the bottom of the pot. After about five minutes, when the rice has started to absorb water, we can add the raw potatoes, cut into small cubes. This ingredient will give the stew a pleasant texture and enrich the dish.

We continue to stir every 2-3 minutes, adding water as it decreases, to achieve a perfect consistency. After half an hour, our stew should be ready, with the rice and potatoes perfectly cooked. It can be enjoyed plain, but for an extra freshness, we recommend serving it alongside pickled cucumbers. On days when fasting is not observed, the stew can be an excellent accompaniment to a juicy steak. If you want to experiment, adding mushrooms or a little paprika can transform this dish into a true delicacy. Although I chose to make the stew simple, mushroom variants are always on the menu in my kitchen. So feel free to explore and adapt the recipe to your taste!
