Preparation time: 30 minutes
Baking time: 15 minutes
Total time: 45 minutes
Number of servings: 12
Necessary ingredients:
For the base:
- 7 eggs
- 5 tablespoons water
- 12 tablespoons flour
- 12 tablespoons sugar
- 2 tablespoons cocoa
- 1 teaspoon salt
For the cream:
- 1 cup sugar
- 3 eggs
- 7 tablespoons cocoa
- 200 g butter
- 7 tablespoons sugar
For the syrup:
- 200 ml brewed coffee
For the glaze:
- 5 squares of dark chocolate
- 5 tablespoons hot coffee
- 2 tablespoons sugar
Preparation:
1. Start with preparing the base. Preheat the oven to 180°C. In a large bowl, beat the egg whites with a pinch of salt until you achieve a firm foam. Gradually add 12 tablespoons of sugar and continue beating until a shiny meringue forms. This technique will ensure a fluffy and airy base.
2. In another bowl, mix the egg yolks with 5 tablespoons of water and cocoa. Incorporating these ingredients will give an intense flavor to the base. Pour this mixture into the bowl with the beaten egg whites and gently fold with a spatula, being careful not to lose the air in the mixture.
3. Add 12 tablespoons of flour and gently mix until homogeneous. Pour the composition into a baking tray lined with baking paper and bake for 15 minutes or until the base passes the toothpick test.
4. Meanwhile, prepare the cream. In a bowl, whisk 1 cup of sugar with 3 eggs and 7 tablespoons of cocoa. Place the mixture over a double boiler and cook, stirring constantly, until it becomes creamy and homogeneous. Let it cool.
5. Once the cream has cooled, incorporate 200 g of soft butter and 7 tablespoons of sugar, mixing until it becomes a smooth and airy cream.
6. After the base has cooled, cut it in half. Generously soak it with 200 ml of hot coffee, ensuring it absorbs well. Fill the cake with the chocolate cream, then place the top half of the base on top.
7. For the glaze, melt the 5 squares of dark chocolate together with 5 tablespoons of hot coffee and 2 tablespoons of sugar, stirring until you obtain a smooth composition. Pour the glaze evenly over the cake.
8. It is essential to let the amandine cool for a few hours, ideally overnight, to allow the flavors to develop and the base to absorb the syrup.
Serving suggestion: Cut the amandine into portions and decorate with whipped cream or chocolate shavings for an elegant look. This coffee-soaked amandine recipe is perfect for parties, anniversaries, or simply to treat yourself.
Possible variations: You can add a few drops of rum or vanilla essence to the chocolate cream for an extra flavor, or you can replace the coffee with a caramel syrup for a sweet and savory variant.
