Black Forest Muffins
Ingredients: Muffins: 3 eggs, 100 ml melted butter, 200 g flour, 6 tablespoons powdered sugar, 2 tablespoons cocoa, 50 g dark chocolate, 1 packet vanilla sugar, 1/2 teaspoon baking soda, 7-8 firm cherries, a pinch of salt. Ganache cream: 100 g dark chocolate (over 55% cocoa), 50 ml liquid cream. Decoration: 300 g liquid cream, 1 packet cream stabilizer, 1 tablespoon powdered sugar, dark chocolate, granulated sugar, cherries.
Cherry Muffins with Ganache Cream
To prepare these delicious cherry muffins, we start by dealing with the cherries. We take fresh cherries, wash them under a stream of cold water, then carefully remove the pits. Once we have only the juicy pulp, we chop them finely to perfectly integrate them into our batter. This step will ensure an even distribution of cherries in each muffin, giving them an intense aroma and irresistible taste.
In a separate bowl, we take care of the egg whites. We add a pinch of salt and start whipping them. When the egg whites begin to become fluffy, we gradually add the four tablespoons of powdered sugar, continuing to mix until we achieve a firm, glossy foam that will give the muffins an airy texture. In another bowl, we beat the egg yolks with two tablespoons of powdered sugar until they become a fluffy, light-colored mixture.
We start combining the ingredients: we add the flour, alternating with the melted butter, gently mixing to avoid losing air in the mixture. Then, we add the baking soda quenched with a little vinegar, the chopped cherries, cocoa powder, and melted chocolate, mixing carefully. Finally, we pour the egg yolk mixture over the egg whites, gently folding with a spatula from the bottom up to maintain the aeration of the batter.
We preheat the oven to 180 degrees Celsius and grease the muffin tin with a little melted butter to prevent sticking. We fill each cavity of the tin with batter, being careful not to exceed 3/4 of its capacity. We bake the muffins for 20 minutes until they turn golden and pass the toothpick test.
After taking them out of the oven, we let them cool for 10 minutes in the pan, then transfer them to a wire rack. We use a teaspoon to gently scoop out the center of each muffin, creating a space for the ganache cream. To prepare the cream, we place the chocolate in a bowl over a bain-marie, gently melting it. Once the chocolate is melted, we take it off the heat and mix it with the liquid cream until we achieve a homogeneous mixture.
For decoration, we whip the cream until it becomes firm, add the stabilizer and powdered sugar, continuing to mix. Using a piping bag, we decorate each muffin with a generous layer of whipped cream. On top, we place a cherry dipped in melted chocolate and sprinkled with granulated sugar for an attractive appearance. Finally, we sprinkle grated dark chocolate to add extra flavor. These cherry muffins with ganache cream are perfect to be served at any special occasion or simply to indulge family and friends.
