Biscuit cake (vegan)
Ingredients: For the biscuit base: 1 kg of vegan biscuits, 200 g of vegan chocolate, 150 g of sugar, one pack of margarine (250 g), 50 g of cocoa, 400 ml of soy milk or water, rum essence. For the cream: 1 packet of vanilla Creme Ole, 300 ml of vegetable cream, 100 ml of soy milk or water. For the glaze: 100 g of vegan chocolate, 50 g of margarine, 50 ml of vegetable cream.
Base: We start by breaking the biscuits into small pieces, preferably with our hands, to achieve an even texture. These will form the delicious base of our cake. In a saucepan, we melt the chocolate together with the margarine over low heat, being careful to stir constantly to prevent sticking and burning. In another bowl, we mix the cocoa with the sugar, ensuring there are no lumps. Then, we add the cold milk, pouring it gradually, and mix with a whisk until we obtain a homogeneous composition. This combination of cocoa and milk will be added to the melted chocolate, which we let simmer for 2-3 boils, stirring continuously to integrate all the ingredients. Once we have a fine mixture, we take it off the heat and let it cool slightly. When the temperature is bearable, we add the rum essence for extra flavor. The resulting sauce is poured over the biscuits and mixed well, ensuring that each piece of biscuit is covered by this delicious mixture. We let the mixture sit for a few minutes, so the biscuits absorb the sauce well. Then, we transfer the biscuits into a round mold, which we have lined with plastic wrap or a plastic bag, leveling the composition well. We tighten the wrap and press firmly to obtain a compact base. We let it chill for 2-3 hours, so the biscuits set well.
Cream: In a bowl, we put the liquid cream, milk, and pudding powder. We mix with an electric mixer on medium speed until the cream starts to thicken and becomes fluffy. This delicious cream will add a creamy texture to our cake. We pour it evenly over the biscuit base, leveling it with a spatula. We put it in the fridge to set well while we prepare the glaze.
Glaze: In a small saucepan, we add the cream, margarine, and chocolate broken into small pieces. We let it cook over low heat, being careful to stir constantly. When the mixture reaches boiling point, we take it off the heat and homogenize well, so that the chocolate melts completely and integrates with the margarine and cream. We let it cool slightly, then carefully pour it over our cake, ensuring it distributes evenly. We let the cake chill in the fridge for the glaze to set, and the final result will be an irresistible delight, perfect for any special occasion.
