Fresh salad is always an excellent choice, especially when we want to enjoy a light and healthy meal, but full of delicious flavors. We start by preparing the ingredients. It is essential to wash the lettuce well to remove any impurities. Once we are done, we carefully dry it, then cut or tear it by hand, depending on preferences. A well-prepared salad will be the perfect base for the rest of the ingredients.

Next, the chicken breast is cut into thin strips, julienne, which will allow it to cook evenly and quickly. The boiled egg, which will be added for an extra texture and taste, is cut into fine slices. The anchovies, this savory and filling ingredient, are well drained of the oil they were preserved in, so as not to affect the consistency of the salad.

For the potatoes, we use a mandoline, which will help us get thin and even slices. We take 5-6 slices of potatoes and gently twist them between our fingers, forming small bouquets that will be fried later. It is important to hold them at the base with a toothpick to maintain their shape during frying. We heat the oil in a taller pot and fry the potato bouquets for 3-4 minutes, turning them frequently on all sides to achieve a golden and crispy color. After frying, we remove them onto paper towels to absorb the excess oil.

For the dressing, in a small bowl, we mix the yogurt with Worcestershire sauce and salad spices, creating a creamy and flavorful dressing, which we keep cool until serving time.

Assembling the salad is a stage full of creativity. In a cup, on a plate, or in a small basket, we start with a layer of green salad, followed by the strips of chicken breast. We drizzle with the prepared dressing, then add the remaining green salad and chicken breast. We continue with the slices of boiled eggs and anchovies, which will add an intense flavor. Around the edge of the plate, we place the fried potato bouquets, which we remove from the toothpicks. Finally, we drizzle again with dressing, sprinkle with white pepper, and add a little grated Parmesan for a special taste.

This salad is not only delicious but also a visual feast, perfect for any occasion. Enjoy your meal!
