Gogosari Soup with Meatballs

 Ingredients: 6 large bell peppers, 4 liters of water, 3 large onions, 300 g carrots, 1 celery, 500 g minced meat, 3 eggs, 50 g flour + 100 g pepper, nutmeg, paprika, 120 g rice, 1 finely chopped onion, 2 tablespoons of water, salt, 1 lemon, lovage leaves, sour cream

To prepare a delicious meatball soup, we start by gathering all the necessary ingredients. We need 500 g of minced meat, which can be pork, beef, or a combination of both, to achieve a rich and savory taste. In a large bowl, we place the minced meat and add 50 g of flour, a fresh egg, a cup of rice, freshly ground pepper, a teaspoon of sweet paprika, a pinch of grated nutmeg, and salt to taste. Then, we add a medium onion, finely chopped, to give an extra flavor to the mixture.

We mix all the ingredients with a wooden spoon or by hand until the composition becomes homogeneous. It is important that all the ingredients are well integrated to achieve juicy meatballs. From this mixture, we take small portions with a spoon, which we place on a plate sprinkled with 100 g of flour. We carefully shape the meatballs, ensuring they are evenly coated with flour to prevent sticking during boiling.

In a large pot, we bring water to a boil. When it starts to boil, we carefully add the meatballs, being careful not to overcrowd them. We boil the meatballs for 10 minutes until they start to float to the surface, a sign that they are almost cooked. After this stage, we add the prepared vegetables: a carrot, a celery root, an onion, and a bell pepper, all finely chopped. These vegetables will give the soup a special flavor and a pleasant texture.

We also add salt to taste, stirring gently to distribute the flavors evenly. We let everything boil for another 25 minutes until the vegetables become tender and the meatballs are fully cooked. Five minutes before turning off the heat, we add the juice of a fresh lemon, which will give the soup a note of freshness, and chopped lovage for an extra flavor.

After giving it a final boil, the soup is ready to be served. We can divide it into deep bowls, garnishing each portion with a few leaves of fresh lovage for an attractive appearance. This meatball soup is not only comforting but also packed with nutrients, perfect for chilly days or to be enjoyed with family.
