To prepare a delicious pig tongue with mayonnaise, the first step is to take care of the tongue. Start by washing the pig tongues well under a stream of cold water, making sure to remove any impurities. Then, place them in a large pot of water and add a tablespoon of salt. Boil them over medium heat for about 1-1.5 hours or until they become tender. It is important to monitor them from time to time, skimming off the foam that forms on the surface to achieve a clear broth.
Once the tongues are boiled, carefully remove them from the water, being careful not to burn yourself, and let them cool a bit. It is essential to peel them while they are still warm, as the skin comes off much easier. Once they are peeled, let them cool completely on a wooden board or a platter.
Meanwhile, we will take care of the mayonnaise. If you prefer, you can use store-bought mayonnaise, but a homemade version is always tastier. To make the mayonnaise, beat the egg yolk with a tablespoon of mustard and a pinch of salt. Start adding oil gradually, mixing constantly, until you achieve a creamy consistency. Once the mayonnaise is ready, you can add the boiled egg white, finely chopped pickles, and fresh dill, finely chopped. These ingredients will give your sauce a fresh and aromatic taste.
To achieve a lighter consistency, blend the sauce with a few tablespoons of the cold broth in which the tongue was boiled, mixing gently. This will not only thin the mayonnaise but also add an extra flavor.
When the pig tongues have completely cooled, slice them thinly, about 1 cm thick. Arrange the slices on a large platter, arranging them nicely so that they are appealing. Once you finish slicing, pour the mayonnaise sauce evenly over the tongue slices, making sure each piece is well covered.
For a more attractive appearance, you can garnish the dish with a few sprigs of fresh dill or lemon slices. Served as an appetizer or main course, pig tongue with mayonnaise is a savory recipe that will surely impress your guests. Bon appétit!
