To prepare delicious pancakes, we start with the classic batter. In a large bowl, we beat the eggs with a pinch of salt, sugar, and oil until we achieve a homogeneous and fluffy mixture. It is essential that these ingredients are well incorporated to ensure a fine texture for the pancakes. Once we have a uniform mass, we begin to gradually add the milk. We use a whisk to mix well, so as to avoid the formation of lumps. After integrating some of the milk, we add 100 grams of flour, continuing to mix. We keep adding milk until we achieve a batter with the right consistency - it should not be too thick, but also not too thin. If you find that the batter is too fluid, add a little more flour; on the other hand, if it is too dense, add a few tablespoons of milk until the desired consistency is reached.

Meanwhile, we take care of the pears boiled in wine. In a saucepan, we add the wine, sugar to taste, cinnamon, and a few peppercorns. We heat the mixture until it starts to boil, and the sugar completely dissolves. Once we have an aromatic solution, we cut the pears into quarters and add them to the saucepan. We cover with a lid and let it simmer on low heat for about 30 minutes. The pears will become soft and absorb the flavors from the wine, resulting in a delicious dish.

While the pears are boiling, we can prepare the sesame crunch. In a separate saucepan, we put the 3 tablespoons of sugar and heat them on low until the sugar starts to melt. It is important to stir constantly to avoid burning. Once the sugar has completely melted, we add the butter and continue to mix. When the mixture becomes uniform, we remove the saucepan from the heat and add the sesame, stirring well to ensure that all ingredients are well incorporated. We let the crunch cool down, becoming crispy and delicious.

To assemble the final dish, we fold the baked pancakes and place them on a platter. On top, we add a few slices of boiled pears, along with the sweet sauce in which they boiled. The last step is to sprinkle the sesame crunch, which adds a crunchy note and a special taste. These pancakes can be served with a drizzle of whipped cream, a scoop of ice cream, or even with fresh fruits to give them an elegant and appetizing appearance. This recipe is not only a delight for the taste buds but also a pleasure for the eyes, perfect for any special occasion.
