To prepare this delicious dish, we start by making a well-cooked polenta, which will serve as the base for this preparation. In a large pot, we bring water to a boil, adding a teaspoon of salt and a tablespoon of cornmeal. This tablespoon of cornmeal helps improve the texture of the water, ensuring a more uniform polenta. When the water begins to boil vigorously, we pour the cornmeal in a rain, continuously mixing with a whisk. It is essential to stir constantly to avoid the formation of lumps. We let the polenta boil for about 10-15 minutes, until it becomes a dense but still soft composition, perfect for spreading in the dish.

Once the polenta is ready, we take it off the heat and prepare to transfer it to a ceramic dish that we have greased with butter. This will help prevent the dish from sticking. We put a first layer of polenta in the dish and level it with a spatula to achieve an even surface. We continue to add half of the chosen cheese: this can be sheep cheese or telemea, according to preferences. Then, we add half of the sausages that we previously cut into thin slices. This will add a savory and consistent flavor to our dish.

We repeat the process: another layer of polenta, followed by the remaining cheese and sausages. This ensures a perfect balance between salty and creamy flavors. On top, we generously grate cheese, which will melt beautifully in the oven, creating a golden and appetizing crust. To add extra flavor, we carefully break three eggs, trying to place them in the corners of the dish so that they do not merge while baking.

We sprinkle a little salt over the eggs to enhance the flavor. Now, the oven should be preheated to a suitable temperature, around 180 degrees Celsius. We place the dish in the oven and let everything bake for 25-30 minutes, or until the eggs are well cooked and a golden-brown crust has formed on top.

When it's ready, we carefully take the dish out of the oven and let the preparation rest for a few minutes before serving. It is ideal to serve this dish warm, alongside a glass of wine, which will perfectly complement the intense flavors of the food. This combination of textures and flavors will turn any meal into a memorable feast!

 Ingredients: For polenta: 700 ml water, salt, cornmeal. For layers: 12 pieces of sausage from lard, 300 g sheep cheese, 3 eggs, 50 g cheese, 1 cube of butter, salt.
