Medium Sgambi with Spaghetti
Ingredients: a package of 500g of sgambi, 2 cans of peeled tomatoes, 1 can of tomato concentrate, thin spaghetti
To prepare a delicious dish with sgambi and spaghetti, start by preparing the necessary ingredients. Make sure you have 500 grams of fresh sgambi, 2 cloves of garlic, 400 grams of canned tomatoes, 2 tablespoons of tomato paste, olive oil, salt, and pepper to taste. Also, don't forget about 400 grams of spaghetti to complete this savory dish.
The first step is to wash the sgambi well under a stream of cold water, ensuring that you remove any impurities. Then, place them in a bowl of cold water and add a tablespoon of salt, letting them soak for about 30 minutes. This step will help improve the texture and flavor of the sgambi.
In a large pot, add a few tablespoons of olive oil and place it over medium heat. When the oil is hot, add the two cloves of garlic, finely chopped or crushed, to release their delicious aromas. Let the garlic brown slightly, being careful not to burn it, as the bitter taste of burnt garlic will only ruin the dish.
Once the garlic has turned golden, it's time to add the drained sgambi. Stir well to coat them with the flavors of the oil and garlic, then add enough water to cover the ingredients well. Cover the pot and let it simmer over medium heat, stirring occasionally, until the water reduces significantly and the sgambi become tender.
After about 30-40 minutes, add the tomato juice from the canned tomatoes and the tomato paste, stirring well to integrate all the ingredients. If the sauce is too thick, you can add a little water. Let the sauce simmer, reducing the heat to low, until it becomes thick and aromatic, about 20 minutes.
When the sauce is ready, remove the sgambi from the pot and use a sieve to separate the meat from the bones, ensuring no bits remain. This way, you will achieve a fine and pleasant texture for your sauce. Meanwhile, in another pot, boil the spaghetti according to the package instructions until al dente.
Once the spaghetti is cooked, drain it well and add it directly to the pot with the sgambi sauce, stirring gently to combine perfectly. You can add salt and pepper to taste, as well as a little fresh basil or grated parmesan for extra flavor. Serve immediately, and your dish will surely be appreciated by all!
