To prepare a refined and delicious dessert, we start by making two cups of concentrated coffee. Once the coffee has cooled, we add sugar to taste and flavor it with a preferred liqueur, such as Amaretto or Baileys, to give it a sophisticated taste and a touch of warmth. It is essential that each ingredient is chosen carefully, as it will influence the final flavor of the dessert.

In a large bowl, we separate the egg yolks from the whites and beat them well with sugar, using a whisk. It is important to keep the mixture over a double boiler, stirring continuously, until the mixture becomes frothy and changes color to a lighter shade. This step will add a layer of air and make the cream fluffier. Once we have achieved a frothy texture, we let the mixture cool completely.

Once the yolk mixture has cooled, we add the mascarpone, mixing well to obtain a homogeneous and creamy composition. In another bowl, we whip the cream until we achieve stiff peaks. In this whipped cream, we add a few drops of vanilla essence to enhance the flavor. Then, we carefully combine the mascarpone cream with the whipped cream, using a spatula to maintain the air in the mixture.

Next comes the assembly of the dessert. We take each ladyfinger and quickly dip it in the flavored coffee, being careful not to leave them too long so they don’t become too soft. We place a first layer of ladyfingers on a tray, forming a solid base. Over this layer, we pour half of the obtained cream, smoothing it with the spatula. We continue with another layer of ladyfingers, which we soak again in coffee, and finish with the remaining cream.

For an elegant decoration, we use a special comb or spatula to create patterns on the surface of the cream. We sift cocoa over it, adding a pleasant contrast and an intense flavor. Our dessert is now ready to be left in the refrigerator for about 8 hours, preferably overnight, to set and allow the flavors to develop fully. When it’s time to serve, we carefully portion it, adjusting the sizes according to everyone’s preferences. Each piece will bring a perfect taste, combining the creamy texture of the cream with the crunchiness of the soaked ladyfingers, providing an unforgettable experience.
