Cherry Cake
Ingredients: 100 g butter, 50 g powdered sugar, 1 egg, 0.5 g salt, 70 g flour, 2.5 g baking powder, 80 g cherries. Crumbly topping: 25 g butter, 25 g powdered sugar, 25 g bread flour.
To create a special cherry cake, we will follow the steps carefully, considering every detail of the recipe. We start by melting 25 grams of butter, being careful not to let it become completely liquid. The butter should be soft but not melted to achieve the desired consistency. In this soft butter, we add 25 grams of powdered sugar and 25 grams of bread flour. We mix all these ingredients with a spatula or by hand, kneading gently until we obtain a homogeneous dough. Once the dough is formed, we place it in the freezer to harden, which will make it easier to cut later.
Meanwhile, we wash 80 grams of cherries, making sure to clean them well, then we remove the pits. The cherries should be cut into 3-4 pieces so that they integrate perfectly into the cake cream. These pieces of cherries will provide a fresh taste and a pleasant texture.
In another bowl, we melt 100 grams of butter, ensuring that it does not become completely liquid. We add it to a bowl along with the powdered sugar and a pinch of salt. We use a mixer to beat these ingredients until the mixture becomes white and fluffy. This step is essential for achieving an airy texture for the cake.
We beat an egg and incorporate it into the butter mixture, adding it gradually in three portions. We continue to mix until we obtain a shiny paste, which will add moisture and richness to the cake. We then sift the flour together with the baking powder into the butter mixture, homogenizing well to form a fine and uniform cream.
We begin to pour this cream into a lined cake pan (or into two pans, depending on preferences), filling them halfway. On top of the cream, we add the cut cherries, gently mixing them to distribute evenly.
Now, it is time to deal with the frozen dough. Using a grater, we cut the dough into thin strips. These strips will form a crispy layer on top of the cream. We place the strips over the cake cream, covering it completely.
We preheat the oven to 200 degrees Celsius and place the pan(s) on the top shelf. We bake the cake until the strips turn golden, after which we reduce the temperature to 150 degrees Celsius and move the pan to the bottom shelf. The baking time is about 40 minutes, but it’s good to check the cake periodically, as each oven may have its peculiarities.
Once the cake is ready, we will enjoy a crispy and crumbly surface, while the inside will be soft and fragrant, enriched by the delicious taste of cherries. This cake is not only a delight for the taste buds but also a true feast for the eyes!
