Step by Step Preparation
1. Preparing the Sponges
# Vanilla Sponge
1. Start by preheating the oven to 180 degrees Celsius.
2. In a bowl, beat the egg whites until frothy. This step is essential for achieving a fluffy sponge.
3. Separately, mix the egg yolks with sugar and vanilla sugar until creamy. Add the beaten egg whites and gently fold in.
4. Sift in the flour, mixing with a spatula to retain air in the mixture.
5. Pour the mixture into a baking tray lined with parchment paper and bake for 10 minutes. After baking, allow the sponge to cool.
# Cocoa Sponge
6. Repeat the same steps as for the vanilla sponge, but add a tablespoon of cocoa when incorporating the flour.
7. Bake for 10 minutes and let it cool.
# Nut Sponge
8. Follow the same steps, but add the ground nuts to the mixture.
9. Bake and let it cool.
2. Preparing the Vanilla Cream
10. In a saucepan, bring 400 ml of milk to a boil, along with 2/3 of the sugar and vanilla.
11. Separately, mix the egg yolks with 100 ml of milk and flour.
12. When the milk starts to boil, add the egg yolk mixture and stir vigorously to avoid lumps.
13. When the cream thickens, remove from heat and let it cool.
3. Preparing the Rum Syrup
14. Boil the water with the sugar until completely dissolved.
15. Add the rum essence and let it cool.
4. Preparing the Chocolate Sauce
16. In a small pot, heat 1/2 cup of milk without boiling it.
17. Add the sugar, cocoa, and Nutella, stirring until well combined.
Assembling the Cake
18. On a platter, place the first layer (the vanilla one) and soak it with some of the rum syrup.
19. Add 1/3 of the vanilla cream and sprinkle with ground nuts.
20. Continue with the cocoa layer, soak it, add nuts, and vanilla cream.
21. Place the last layer, soak it again, and add the remaining cream.
22. Decorate with nuts and sprinkle cocoa on top. Refrigerate for a few hours.
