I made the dough as usual in the bread machine. I mashed the cold potato, added the room temperature milk, the egg, the oil, and finally the flour and yeast. I always add the salt when the machine beeps. If you are making it by hand, mix the flour with the yeast dissolved in a little milk and then gradually add the rest of the ingredients. Let it rise for about 2 hours or less (depending on the temperature of your kitchen). While the dough is rising, we prepare the filling. I peeled 3 large sausages: I sautéed the meat in a tablespoon of oil, no more, along with 2 boiled potatoes cut into cubes and spicy paprika. Once all the liquid evaporates, set it aside and let it cool. You can also use minced meat of any kind, seasoned to your liking and sautéed. We turn the dough onto a floured table and divide it into two balls (one larger and one smaller). We roll out the larger ball (I personally use my hands) to cover the bottom of the pan and the sides up to halfway. We add the cold minced meat, mozzarella, and brie or cheese. We roll out the smaller ball into a thin sheet and cut it into strips to cover the tart, placing the strips over the filling, then putting small whole red peppers and olives in the spaces made by the strips. Let it rise for a maximum of 30 minutes, and before putting it in the oven, brush it with oil and sprinkle some sage: it bakes for 30 minutes at 180 degrees. Enjoy your meal!
