Mucenici with Dough – A Recipe Full of Tradition and Flavor

Every year, on March 9th, religious communities celebrate the Day of the 40 Martyrs of Sebastia. This day brings a special culinary tradition, and every housewife lovingly prepares mucenici, a dessert that symbolizes sacrifice and hope. Today, I will share with you a delicious recipe for mucenici with dough, made with the help of a bread machine. This is a simple yet flavorful recipe that will delight all your loved ones.

Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Number of servings: 12 servings

Ingredients:
- 250 ml warm water
- 70 ml sunflower oil (or another preferred oil)
- 1 teaspoon salt
- 1 teaspoon rum essence (or vanilla, to taste)
- Zest of 1 lemon and 1 orange (for a fresh taste)
- 500 g flour type 000
- 1 packet dry yeast (about 7 g)
- 200 g sugar (for the syrup)
- 300 ml water (for the syrup)
- 150 g ground walnuts (optional, for decoration)

Preparation:

1. Prepare the bread machine: Start by setting the bread machine to program 8 (kneading and rising). This is the perfect time to enjoy the aroma of fresh ingredients.

2. Add the liquid ingredients: In the bread machine's bowl, pour in the warm water, oil, and rum essence. These ingredients will help achieve a fluffy and aromatic dough.

3. Add the dry ingredients: Over the liquid ingredients, add the flour, salt, and the zest of lemon and orange. In the middle, add the dry yeast. It is important not to mix the yeast directly with the salt, as it can inhibit fermentation.

4. Kneading and rising: Let the machine do its job, kneading and rising the dough for about 1 hour. You will notice how the gluten develops, and the dough becomes elastic and uniform.

5. Shaping the mucenici: After the dough has risen, take it out of the bowl and place it on a floured work surface. Divide the dough into equal portions (about 100 g each) and shape them into the form of an “8.” This shape symbolizes eternity and is specific to this recipe.

6. Placing the mucenici in the tray: Place the shaped mucenici on a baking tray lined with parchment paper, leaving enough space between them to rise. Cover them with a towel and let them rise for 20 minutes.

7. Preheating the oven: While the mucenici are rising, preheat the oven to 180°C. This step is essential for achieving even baking and a beautiful browning.

8. Baking the mucenici: After the mucenici have risen, place the tray in the preheated oven and bake for 20-30 minutes, until they become golden and fluffy. This is the moment when the delicious aroma will fill the entire kitchen!

9. Preparing the syrup: In a saucepan, combine 300 ml of water with 200 g of sugar and add a few drops of rum or vanilla essence. Boil the mixture for 5-10 minutes, until the sugar is completely dissolved. The syrup will give the mucenici a moist and flavorful texture.

10. Finishing the dish: Once the mucenici are ready, take them out of the oven and, while they are still hot, drizzle them with the prepared syrup. Sprinkle ground walnuts on top for added flavor. If you prefer a sweeter version, you can use honey instead of walnuts.

11. Serving: Mucenici are just as delicious warm as they are after cooling down. Serve them on a festive platter, making sure to include the remaining syrup for those who wish to sweeten them further.

Practical tips:
- Oil: Using sunflower oil gives a neutral taste. However, if you want a more intense flavor, try olive oil.
- Essences: Experiment with various essences – vanilla or almond essence can add a special note to the mucenici.
- Vegan option: This recipe can be adapted for vegans by using water as the main ingredient and omitting animal products.

Nutrition:
Each serving of mucenici contains approximately 250-300 calories, depending on the amount of syrup and walnuts used. These mucenici provide complex carbohydrates, having a good nutritional intake due to the flour used. Additionally, walnuts add healthy fats and proteins.

Frequently asked questions:
- Can I use whole wheat flour?: Yes, but the dough will be denser. It is recommended to combine white flour with whole wheat flour for a lighter texture.
- What can I do with leftover mucenici?: You can keep them in an airtight container for a few days. They are also delicious cold, so feel free to serve them the next day!

Now that you know how to prepare these mucenici with dough, all that’s left is to enjoy them with your loved ones. This recipe will bring you not only culinary satisfaction but also the joy of keeping a living tradition. Enjoy!
