Baked mackerel
Ingredients: 1kg mackerel, 2 carrots, 300g root celery, 3 onions, 1 glass of white wine (200ml), peppercorns, bay leaves, oil, 2-3 tablespoons of broth, lemon, greens, fish spices.
To prepare a delicious fish, the first essential step is cleaning and preparing it. Choose a fresh fish, whether it is salmon, sea bream, or trout, and make sure to clean it well, removing all the insides and scales. After you finish cleaning, wash it under a stream of cold water and dry it with a paper towel. Now is the time to salt and season it, using salt, pepper, and, if desired, some herbs like thyme or rosemary. Let it absorb the flavors for about an hour to intensify its taste.
In the meantime, you can prepare the vegetables that will accompany the fish. Cut the onion into thin strips, the carrot into rounds, and grate the celery. In a large skillet, heat a little olive oil and add all the vegetables. Sauté them over medium heat, stirring constantly, until they become slightly translucent and the flavors combine, about 5-7 minutes. After the vegetables have sautéed, add the tomato puree, dry white wine, pepper, bay leaves, and the juice of half a lemon. These ingredients will bring a fresh and tangy note to the dish. Simmer the mixture for about 10 minutes so that the flavors meld well.
Once the vegetables have cooked, take a baking dish and spread them evenly on the bottom. Carefully place the fish on top of the vegetables, ensuring it sits well. Cover the dish with aluminum foil to retain moisture, then place it in a preheated oven at 180 degrees Celsius. Let the fish bake for about 30 minutes until it becomes tender and well-cooked.
After the baking time is complete, remove the dish from the oven and let it rest for a few minutes. Serve the dish warm, sprinkled with freshly chopped parsley and accompanied by lemon slices, which will add a touch of freshness.
