Bread with Milk
Ingredients: 500 g flour, 2 eggs, 1 teaspoon of sugar, 1 teaspoon honey, 2 teaspoons salt, 220 ml milk, 2 teaspoons dry yeast, 70 grams butter, poppy seeds, sesame seeds
Maia: In a bowl, we mix the yeast with sugar, honey, and half of the warm milk, which we have gently heated. We add 4 tablespoons of flour and mix well until we obtain a homogeneous composition. We cover the bowl with a clean towel and place it in a draft-free spot; I prefer to place it in the microwave without turning it on to create a warm environment. We let the starter rise for about 10 minutes until it becomes frothy and doubles in volume. In the original recipe, the ingredients are added to a bread machine, but I will present the manual version, which involves more interaction.
In a taller bowl, we put the rest of the warm milk, eggs, salt, and soft butter, then add the risen starter and the rest of the flour. Using our hands or a mixer with a hook, we knead the dough well for about 10 minutes. In the end, we will obtain a soft, fluffy dough that will not stick to our hands. We cover the bowl with a napkin and let the dough rise for an hour in a warm place until it doubles in volume.
After the dough has risen, we place it on a lightly floured work surface and divide it into six equal pieces. We take each piece and roll it out into a rectangle shape, then roll it along the long side to form a log. We cover the logs with a towel and let them rise for another 10 minutes. In the meantime, we prepare the loaf pan, which we line with baking paper to prevent sticking.
Returning to the dough logs, we roll them out again into a rectangular shape, then roll them along the shorter side and place them in the prepared pan. We let the loaf rise again for 30 minutes. If we want a faster rise, we can put the pan in the oven that we have preheated for a few minutes and then turn off the heat.
When the dough has risen again, we take the pan out of the oven and preheat it to 180 degrees Celsius. We brush the top of the loaf with a thin layer of milk and sprinkle poppy and sesame seeds, adding a crunchy and aromatic note. We bake the loaf in the oven until it becomes golden and beautiful, a stage that takes between 30 and 40 minutes, depending on the oven. When the loaf is ready, we take it out and let it cool slightly before slicing it, so we can enjoy a fluffy, aromatic, and delicious slice.
