Farfalle with Spicy Pepper and Garlic Sauce
To prepare a delicious sauce that will perfectly accompany your favorite pasta, we start by ensuring that the ingredients are fresh and ready. Onion, garlic, and chili pepper are the three basic ingredients that will give an intense and aromatic flavor to the sauce. The first step is to peel the onion and garlic, then wash them well under a stream of cold water. The onion should be finely chopped so that it cooks evenly, and the garlic will also be minced to release its flavors. As for the chili pepper, I chose to keep the seeds because the peppers I used were not very spicy, but you can adjust this choice according to your preferences.
After preparing the vegetables, we put a tablespoon of olive oil in a pan. It is important that the oil is well heated before adding the onion, garlic, and chili pepper. These ingredients are sautéed for about 5 minutes until the onion becomes translucent and slightly caramelized, and the flavors combine. At this point, we add the remaining oil, gently stirring with a wooden spoon to ensure that all the ingredients are well incorporated.
The next step involves adding tomato paste to the pan. If you prefer a more natural version, you can use 4 tomatoes in oil that have been drained, sun-dried, and then chopped. This will add a note of freshness to the sauce. It is essential to continuously stir the mixture to avoid sticking and to allow the flavors to develop. Once the sauce is well homogenized, we add finely chopped herbs, which will provide a note of freshness. We season the sauce to taste with salt, a mix of white, green, and black pepper, and a little paprika, which will add a vibrant color and a slightly smoky flavor.
Meanwhile, we prepare the pasta according to the instructions on the package. It is important to boil them al dente for a pleasant texture when serving. Once the pasta is ready, we drain it and add it hot over the prepared sauce. We mix well to ensure that each piece of pasta is evenly coated with the aromatic sauce. Before serving, we generously sprinkle freshly grated Parmesan on top, which will melt slightly and add a creamy and savory taste. Serve the pasta immediately to enjoy the intense aroma and the perfect combination of flavors!
