This recipe is not just a simple meal, but a culinary experience that will transform any dinner into a special moment.

Preparation time: 40 minutes
Baking time: 25 minutes
Total: 1 hour and 5 minutes
Servings: 2-4 servings

Ingredients:
- 1 slice of Moravian ham
- 1 piece of pork chop
- 100 g of chicken livers
- 1 small onion (approximately 100 g)
- 1 celery root (approximately 200 g)
- 1 garlic clove
- 10 ml of cognac
- Salt, to taste
- 6 g of nutmeg
- 15 green bean pods
- 1 parsnip
- 1 small pumpkin
- 1 bell pepper (preferably red or yellow)
- 1 carrot
- 2 slices of orange
- 2 potatoes
- Butter, for cooking
- Olive oil, for frying
- 4 cherry tomatoes
- Pepper, to taste
- Thyme, to taste

Step by Step

Step 1: Prepare the liver paste

Start by finely chopping ½ of the onion and the garlic clove. Heat a pan over medium heat and add a tablespoon of butter. Add the onion and garlic and sauté until translucent, about 3-4 minutes. Then, add the chicken livers, salt, pepper, and thyme. Sauté until they are slightly browned, about 5-7 minutes. Finally, flambé with cognac. This will not only enhance the flavors but also add a touch of sophistication. Let the mixture cool, then transfer it to a blender and blend until you achieve a smooth paste.

Step 2: Prepare the vegetables for the filling

Wash and peel the celery, parsnip, and carrot. Boil them in salted water. From the parsnip, cut a thin chip that you will leave in the water for a shorter time, then remove it. The other vegetables should be boiled well to make a flavorful purée. Separately, boil the green beans in salted water until they are slightly crunchy (75% cooked), then immediately place them in cold water to retain their vibrant green color.

Step 3: Sauté the vegetables

Cut the carrot, bell pepper, and celery into julienne strips. In a pan, add a little butter and sauté the carrot, celery, 2-3 green bean pods, and bell pepper. Cook until they soften, then add salt and remove them from the pan, setting them aside for the filling.

Step 4: Prepare the roll

On a sheet of aluminum foil, place the slice of Moravian ham, the flattened pork chop, a sprinkle of thyme, the sautéed vegetable strips, and the two finely sliced orange pieces. Carefully roll it up, tightening it well so that the filling doesn’t spill out. Brush the roll with a little oil and seal it tightly.

Step 5: Fry and bake the roll

In a hot pan (without oil), place the roll and fry it for a few minutes on each side until golden brown. Prepare a bed of vegetables: wash and peel the potatoes, then slice them thinly. In a baking dish, add oil, bell pepper, the remaining onion, sliced carrot, green beans, thyme, and pepper. Place the roll on top of the vegetables and bake in a preheated oven at 180°C for about 25 minutes.

Step 6: Prepare the purée

Meanwhile, prepare the celery and parsnip purée. After boiling, drain the water and blend them well. In a pan, add a little butter and the purée, seasoning with salt and grated nutmeg.

Step 7: Finalize the dish

Check the roll, and if it is nicely browned, remove it from the oven. Let it rest for a few minutes, then slice it. In a pan, add a little butter and fry the parsnip chip and cherry tomatoes for decoration.

Useful Tip
For an extra burst of flavor, you can add a little grated orange zest to the vegetable filling. Additionally, for a more elegant presentation, serve the roll on a bed of celery purée and garnish with parsnip chips and fried cherry tomatoes.

Perfect Pairings
This dish pairs wonderfully with a dry white wine or a fresh citrus cocktail. Also, for a contrast of textures and flavors, a simple green salad with lemon dressing would be an excellent choice.

Nutritional Benefits
Chicken livers are an excellent source of protein, vitamins (especially B12), and essential minerals. The vegetables provide an important contribution of fiber, antioxidants, and vitamins. This recipe is not only delicious but also nutritious, ideal for a healthy meal.
