Beetroot Borscht with Grausor
Ingredients: 1-2 pcs. red beet, 1 leek, 1 carrot, 1 parsley root, 1 parsnip, 1 small celery, 1 medium onion, 1 bunch of green onions, 1 bunch of chard, 1 bunch of sorrel, 1 bunch of dill, 1 bunch of buttercup, 3-4 potatoes, 1/2 liter of fermented borscht, salt, lovage.
To prepare a delicious and nutritious soup, we start by boiling a liter of water in a large pot. We add a teaspoon of salt, which will help enhance the flavor of the ingredients. We wait for the water to reach boiling point, at which point we can add the peeled and finely chopped onion, followed by the sliced leek. These vegetables will give the soup a pleasant aroma and a sweet taste, perfect for forming the base of our dish.
After the onion and leek have started to soften, it's time to add the diced vegetables, such as carrots, celery, or zucchini, and potatoes, which will add consistency to the soup. We mix the ingredients well and let them boil over medium heat for 10-15 minutes until the vegetables become tender.
When the potatoes are almost cooked, we add grated beetroot, which will color the soup in a vibrant shade of pink and add a hint of sweetness. We mix well and let it boil together with the other vegetables for a few minutes, so the flavors combine harmoniously.
As we near the end of the cooking process, it’s the perfect time to add finely chopped herbs, such as dill or basil, which will bring an extra freshness and intense flavor. Don't forget to save a bit of fresh parsley to sprinkle at the end in the bowls, adding a touch of color and aroma.
Finally, we add the boiled borscht, which will give the soup a tangy and refreshing taste. We let everything boil together for a few more minutes to ensure the flavors have combined perfectly.
We serve the soup hot, sprinkled with green parsley and freshly chopped lovage, which will bring a note of freshness and a delicious taste. This soup is not only nutritious but also comforting, perfect for cool days or to bring a smile to the faces of loved ones. Enjoy your meal!
