Bean and Cornelian Cherry Soup

 Ingredients: * 400 grams of beans * 1 bell pepper * 3 carrots * 2 onions * 3 fresh tomatoes * 1/2 can of tomatoes in juice * 2 tablespoons of olive oil * 2 handfuls of sour cherries * 1 bunch of fresh dill * salt, pepper

The preparation of this delicious soup begins the night before, when the beans are soaked in cold water. This step is essential as it helps reduce cooking time and improves the texture of the beans. The next day, after soaking, we change the water for the beans and put them to boil in a large pot. It is important to skim off any skins that come off the beans from time to time to achieve a clearer and more appetizing soup. I prefer to change the water 2-3 times to get rid of impurities and excess starch.

In the meantime, we take care of the vegetables. We peel, wash, and dice carrots, onion, and bell pepper, but we can also add other vegetables like celery or zucchini, depending on preferences. Once the beans start to boil, we add these vegetables to the pot, along with a tablespoon of oil, salt, and pepper, to enhance the flavor. We let everything simmer on medium heat so that the vegetables soften and release their flavors into the soup.

In another pot, we prepare the sour plum sauce. We boil the washed and cleaned plums with a cup of water until they become soft. After boiling, we lightly mash them with a fork, adding a little salt and, if desired, a splash of sugar to balance the acidity. This sour sauce will bring a unique taste to the soup.

When the beans and vegetables are cooked, we add the grated fresh tomatoes and canned tomatoes, which will enrich the flavor of the soup. We let everything boil together, stirring occasionally. Depending on taste, we can add more salt or pepper. The soup should be well-seasoned to highlight all the flavors of the ingredients.

Finally, we chop fresh dill and sprinkle it on top of the soup, giving it a fresh and appetizing look. The soup is served hot, alongside the sour plum sauce, which will provide a pleasant contrast between the sweetness and acidity of the dish. This soup is not only tasty but also a healthy choice.
