Spaghetti with Olive Oil, Flavored and Capers

We start by boiling the spaghetti according to the instructions on the package. It is important to use an adequate amount of salted water to enhance the flavor of the pasta. When the water reaches a boiling point, add the spaghetti and stir gently to prevent them from sticking. Let them boil until they become al dente, that is, slightly firm to the bite.

Meanwhile, we prepare a flavored oil that will add a special note to our dish. In a pan, add good quality olive oil, enough to cover the bottom of the pan. Wait for it to start sizzling, a sign that it is ready to add the aromatic ingredients. Peel a few cloves of garlic, then wash them and slice them thinly. Once the oil is heated, add the sliced garlic and let it fry for about 1 minute. The garlic will release its aromatic oil, enriching the dish.

After the garlic starts to turn golden, add a few capers that you have washed and chopped into smaller pieces. These will add a salty and slightly spicy flavor. Then, add a few sprigs of fresh rosemary and sage leaves that you have washed and finely chopped. These herbs will perfectly complement the flavor of the pasta. Season with salt and pepper to taste, and let the mixture simmer on low heat for another 2 minutes, covering the pan with a lid to concentrate the flavors.

Then, add formaggio, a grated cheese that will melt easily and bind all the ingredients into a delicious combination.
