Recycled Cozonac
To prepare a savory and aromatic dessert, we start by making the sugar syrup. In a saucepan, we add six tablespoons of sugar and caramelize them over medium heat, stirring constantly to avoid burning. Once the sugar turns golden and liquid, we extinguish it with 250 ml of water. It is important to be careful, as the mixture will steam and sputter. We let it boil until the sugar completely dissolves, then we add a vial of rum essence, which will give the syrup a special flavor. We let the syrup cool slightly, during which time we can prepare the puddings.
In a bowl, we mix the pudding powder with five tablespoons of sugar, ensuring there are no lumps. Then, we gradually add 500 ml of cold milk, stirring continuously to obtain a homogeneous mixture. We transfer the mixture to a saucepan and put it over medium heat, boiling it until it thickens. It is essential to stir constantly to prevent it from sticking to the bottom of the pan. We do the same with the other pudding.
Now we prepare the detachable cake mold, which we line with wrapping foil to facilitate the removal of the dessert once it has set. We start by placing a first layer of slices of sweet bread, which we spread with apricot jam. It is important that the jam is evenly distributed to add a sweet and aromatic note. After placing the sweet bread, we generously drizzle the slices with the burnt sugar syrup, ensuring that each piece is well hydrated.
On top of this layer, we pour one of the puddings, which should be hot to perfectly combine with the sweet bread. We continue to add another layer of jam-spread and syrup-soaked sweet bread slices, followed by the second hot pudding. This process of alternating layers will create a delicious and appealing dessert.
As a final step, we cover the dessert with a layer of jam-spread sweet bread slices, making sure to apply it in a thin layer so it doesn't become too sweet. On top, we pour the lemon-flavored glaze from Dr. Oetker, but if you prefer, you can opt for a chocolate or caramel glaze, which will add an extra flavor. After we finish, we let the dessert cool for at least 3-4 hours, so that all the flavors combine harmoniously.
Before serving, we cut the dessert into generous slices and can add a topping of chocolate, fresh fruits, or whipped cream to give it a special appearance. This dessert will surely be the star of any meal. Enjoy!
