Oat Bran Pudding - Dukan
I found this oatmeal bran pudding recipe some time ago, but it wasn't until I started the Dukan diet that I really tried it. I never imagined that such simple ingredients could yield something close in taste and texture to rice pudding, but it really works. I'm also attracted to it because it takes very little time, and you don’t have to stand by the stove for long.
Quick Info
Total time: 10 minutes
Preparation time: 2-3 minutes
Cooking time: 5-7 minutes
Servings: 1
Difficulty: easy
Recipe type: quick dessert, suitable for the Dukan diet or any low-carb regimen
Ingredients
4 tablespoons oat bran
150 ml skim milk 0.1% (I used Zuzu, but any very low-fat milk works)
1/2 capful liquid sweetener (or 1 tablespoon xylitol)
Powdered cinnamon, for serving
Preparation Method
1. Put the skim milk in a small saucepan over low heat. Add the sweetener and stir.
2. When the milk starts to warm up, add the oat bran. Stir continuously with a spoon to prevent sticking.
3. Continue cooking on low heat. The mixture will thicken quite quickly, similar to semolina with milk. If you don’t stir constantly, it will stick to the bottom of the pot.
4. When the mixture is thickened and has the consistency of a soft pudding (about 4-5 minutes after adding the bran), remove the saucepan from the heat.
5. Pour the mixture into a cup, glass, or any shape you like. Let it cool for about 5 minutes at room temperature.
6. Sprinkle powdered cinnamon on top before serving.
Why I make this recipe often
It’s among the quickest desserts for diet days, or when I crave something lightly sweet and filling. I love that it requires no planning; the ingredients are always in my pantry. Plus, the texture is very close to rice pudding but without sugar and many calories.
Tips and Variations
Tips
If you use very low-fat milk, it won’t stick as easily, but I still recommend stirring constantly.
Do not leave it unattended on the heat; the pudding can stick quickly to the pot.
You can adjust the consistency: if you want it more liquid, turn off the heat sooner; if you want it thicker, leave it for another minute.
Substitutions
Skim milk can be replaced with unsweetened almond milk if you are not following Dukan, but it won’t be quite the same as in the original recipe.
Xylitol can be substituted with another liquid sweetener compatible with your diet.
Variations
You can add a little vanilla essence or lemon zest if you prefer other flavors.
If you’re not following the Dukan diet and want something other than cinnamon, you can add a bit of cocoa or cardamom powder, but don’t mix too many flavors in a small portion.
Serving Ideas
I serve it simply, with cinnamon on top.
It can be completely cooled in the fridge, but I usually eat it after it has cooled for a few minutes.
Frequently Asked Questions
1. Can I use another type of milk?
Yes, cow's milk with a different fat percentage, or unsweetened plant milk, but if you are following Dukan, stick to the skim version.
2. Do the oat bran need to be ground or soaked beforehand?
No, it’s not necessary. Use it directly as it is; it will absorb the liquid during cooking.
3. Can I double the quantity for more servings?
Yes, just increase the quantities proportionally and use a slightly larger pot.
4. How sweet does it turn out with the recommended amount of sweetener?
It turns out moderately sweet. If you prefer it sweeter, you can adjust the sweetener to taste.
5. Can the pudding be made in advance and stored?
You can make a double or triple batch, but the texture changes in the fridge and becomes denser.
Nutritional Values
Estimate for one serving:
Calories: approx. 120-130
Protein: 6-7 g
Carbohydrates: 15-18 g
Fats: under 2 g
Values are indicative and may vary depending on the milk brand and type of sweetener used.
Storage and Reheating
The pudding lasts in the fridge for up to 24 hours, but the texture will become more compact. I do not recommend reheating it, as the bran absorbs all the liquid and it becomes too thick. It’s best to make and consume it fresh. However, if you cool it, you can eat it cold, like a dense dessert.
