Turkey, a versatile and savory ingredient, can become the star of your meal with a simple yet flavorful recipe. The first step is to ensure that the bird is well prepared. After scalding, we pass the turkey through the flame of the stove to remove any remaining feather strands, then we rub it with a handful of cornmeal, which will give it a unique flavor.

Once we have cleaned the bird, we wash it well and carefully remove the intestines, taking care not to damage the meat. The next step is to cut the turkey into suitable pieces, depending on everyone's preferences. Choose the most beautiful pieces of meat and put them to boil in a pot of cold water. Once the water starts to boil, it is important to clean the foam that forms on the surface using a spatula. This will ensure a clear and appetizing soup.

After obtaining a clean broth, we add finely chopped onion and the peeled carrot, which we grate. These vegetables will add extra flavor and sweetness to the soup. We let everything boil until the meat becomes a little softer. If it is winter and we do not have fresh vegetables on hand, we can resort to jarred soup vegetables, which contain bell pepper, carrot, tomatoes, celery, parsley leaves, and lovage, all carefully prepared to preserve their natural flavors.

While the soup is boiling, we can prepare homemade noodles. It is a pleasant and simple process: we mix one egg with enough flour to obtain a firmer dough. After kneading well, we cut the dough with a knife or use a noodle maker to obtain thin and uniform strips.

Once the noodles are ready, we add them to the soup, and when they are cooked, we pour in the borscht that we heated beforehand. It is time to adjust the taste of the soup with salt, and after we turn off the heat, we add the finely chopped parsley and lovage. These fresh herbs will intensify the flavor of the soup and bring a note of freshness.
