Spinach and Ricotta Croissants
Dough: We start by preparing the dough, which will form the delicious base of our preparation. In a large bowl, combine the flour and cold, diced butter. Use your fingers to work the butter into the flour until the mixture becomes sandy. It is important to work quickly to avoid melting the butter. Once the texture is just right, add cold water gradually, a tablespoon at a time, stirring constantly until the dough is smooth. Form into a ball, wrap in cling film and refrigerate for at least an hour. This step will ensure that the dough is tender and easy to handle. This time, I opted to buy the dough ready-made, which saves time and effort, but feel free to use the recipe above if you want to make it at home.
Filling: While the dough is chilling, we focus on the filling. We start by boiling the spinach, making sure to let it boil only as long as necessary to preserve all the nutrients and flavor. Once it has cooled, roughly chop it and place it in a bowl. Here, we add ricotta, which will bring a delicious creaminess to the filling. Mix the ingredients well until smooth. Continue with the cream, but if it's not available, a fresh cream cheese will do a great job. At this point, we also add an egg, grated Parmesan cheese, salt and pepper to taste, and a pinch of garlic, which will add flavor. An essential ingredient is nutmeg; we add a small amount, as its flavor goes perfectly with the spinach and enriches the taste of the filling.
Assembly: Once the dough has cooled, roll it out on a floured surface into an even disk. Divide the disk into eight equal triangles. On each triangle, distribute the filling, taking care to leave the edges free so that they can be easily closed. For extra flavor, add cubes of smoked cheese over the filling, which will add intense flavor and texture. Wrap each triangle into a cone, making sure they are well sealed. Brush each bun with an egg yolk for a golden and appetizing crust.
Baking: Preheat the oven to 180 degrees Celsius. Place the croissants on a baking tray lined with baking paper and bake for about 30 minutes or until golden and tender. The flavor that will spread throughout the kitchen will be irresistible! Once ready, let them cool slightly before enjoying. These little croissants are extremely tender and very tasty, perfect as a snack or as an appetizer at a festive meal. Enjoy!
Ingredients: Ingredients for 8 pieces: we use muffin dough. My recipe is: 500 g of flour, 250 g of butter, 125 g of very cold water, salt. Filling: 100 g of spinach (weighed, boiled, and drained of water), 100 g of ricotta, 2 tablespoons of sour cream (I used a fresh cheese without preservatives that is something between sour cream and Philadelphia), 1 egg, 2 tablespoons of parmesan, a slice of smoked cheese, salt, pepper, nutmeg, garlic powder (very little).
