Every Sunday, we gather around the table not only to enjoy a delicious meal but also to delight in a dessert that pleases our senses. Today, I propose a simple and refined recipe for a cake with panettone, a quick dessert perfect for ending a week full of joys.
Ingredients:
- 1 panettone (approximately 500 g)
- 100 ml orange liqueur (or orange syrup for an alcohol-free version)
- 500 ml milk
- 100 g sugar
- 50 g cornstarch
- 1 packet of vanilla essence
- 3 eggs
- 200 ml whipping cream
- Dried fruits or nuts for decoration (optional)
Step by step:
1. Preparing the panettone: Start by slicing the panettone into pieces about 2 cm thick. This texture will allow each slice to absorb the orange liqueur and become soft and flavorful. A useful trick is to use a serrated knife, which will cut the bread more easily without crushing it.
2. Soaking the panettone slices: Use a pastry brush to coat each slice of panettone with the orange liqueur. If you prefer an alcohol-free version, you can use an orange syrup made from water and sugar, boiled together with orange peel for an intense flavor.
3. Preparing the pudding cream: In a saucepan, add the milk, sugar, cornstarch, vanilla essence, and eggs. Whisk the ingredients well, then place the saucepan over medium heat. Continue to stir constantly until the cream thickens and becomes smooth. This step is essential for achieving a perfect pudding, so don’t rush!
4. Assembling the cake: In a springform cake pan, start layering the slices of panettone. Pour a generous layer of pudding cream on top, smoothing it out with a spatula. Continue alternating layers of panettone and cream until you finish the ingredients, ensuring that the last layer is cream.
5. Cooling the cake: Cover the cake with plastic wrap and refrigerate for at least 2 hours, preferably overnight. This resting time will allow the flavors to meld and the cake to set.
6. Finishing and serving: Before serving, whip the cream until it becomes firm. Spread a thin layer of whipped cream on top of the cake. You can decorate with dried fruits or nuts, adding a splash of color and texture.
