Chop the onion finely and sauté it in a pan with a little oil over medium heat until it becomes translucent and starts to release its aroma. This is the ideal moment to add a finely chopped clove of garlic, which will enhance the flavor of the dish. Stir well, allowing the garlic to sauté for a minute, being careful not to burn it, as it can become bitter.
Once the onion and garlic are sautéed, add the cut pieces of meat, preferably pork or beef, depending on your preferences. Brown the meat on all sides for a few minutes so that it retains its juiciness and develops a tasty crust. Once the meat is well browned, pour in two cups of water into the pan, stirring gently to release the bits from the bottom of the pan that add extra flavor.
Let the mixture simmer on low heat, covered, for about 30 minutes. This way, the meat will become tender and absorb the flavors that develop in the pan. It is important to check from time to time, adding water if necessary, to prevent sticking or burning of the dish. After this time, you can add your favorite spices: salt, pepper, paprika, or herbs like thyme or rosemary, which will add a special taste to the dish.
Once the meat is nearly done, you can add your preferred vegetables, such as carrots, potatoes, or bell peppers, cut into cubes. These will not only enrich the dish but also add color and texture. Continue to cook on low heat, covered, for another 20-30 minutes, until the vegetables are cooked but still maintain a pleasant texture.
Finally, check the taste of the sauce and adjust the spices if necessary. If you prefer a thicker sauce, you can remove the lid and let everything simmer for a few more minutes to evaporate the excess water.
