To prepare a delicious recipe of chicken liver with wine and cream sauce, we start by gathering all the necessary ingredients. You will need 500 grams of chicken livers, two medium onions, two cloves of garlic, 100 ml of dry white wine, 200 ml of cream, a teaspoon of dried thyme, salt and pepper to taste, as well as 50 grams of butter. Make sure all ingredients are at room temperature to achieve a uniform and tasty dish.

In a large skillet, add a little olive oil and sauté the finely chopped onion. Let it cook over medium heat for about two minutes until it becomes translucent. Then, add the crushed or finely chopped garlic and continue to sauté, stirring constantly to avoid burning. Do this step until the garlic releases its aroma and turns golden.

After the onion and garlic are sautéed, add the chicken livers. They will require about 15 minutes of cooking over medium heat. Meanwhile, season with thyme, salt, and pepper, mixing well to distribute the flavors. The livers should be cooked evenly, so turn them occasionally with a spatula.

After 15 minutes, pour the white wine into the skillet and reduce the heat, allowing the sauce to simmer slowly for about 10 minutes. This step will intensify the flavors and create a rich sauce. If you wish, you can add the cream at this point, mixing well to combine all the ingredients. Keep the dish on low heat for another 5 minutes until the sauce has reduced significantly, but be careful not to dry out the livers.

Once the livers are ready, remove the skillet from heat and let the dish cool. Add the sliced butter, which will melt easily due to the heat of the livers, and mash everything with a fork, mixing until you achieve a homogeneous composition. It is important not to use a food processor, as we want to maintain a slightly grainy texture.

After obtaining the desired mixture, taste and adjust with salt and pepper if necessary. Transfer the dish to an airtight container and refrigerate for about 30 minutes, during which the flavors will blend perfectly. This dish can be served on toasted bread or alongside a fresh salad, making it an ideal choice for a refined dinner or a savory snack. Enjoy every bite!
