Ingredients Needed

To achieve the perfect diplomat cake, you will need the following ingredients:

- 1 large package of ladyfingers (or similar biscuits)
- 5 egg yolks
- 250 g sugar
- 500 ml milk
- 500 ml pastry cream (liquid whipped cream)
- 2 packets of vanilla sugar
- 20 g gelatin (2 packets)
- 1 packet of cake gel
- 1 tablespoon of cornstarch
- 1 packet of instant vanilla cream
- 250 ml condensed milk
- Vanilla essence
- 1 large can of peaches
- Candied orange peel
- Raisins (optional)
- Blueberries (frozen or fresh)
- Grated lemon and orange zest

Preparing the Cake

1. Preparing the gelatin: Start by dissolving the gelatin in 50 ml of peach syrup. Then, place the mixture over steam and gently heat until it begins to boil. Remove from heat and let it cool slightly.

2. Egg yolk cream: In a bowl, whisk the egg yolks with the sugar, vanilla sugar, grated lemon and orange zest, milk, and cornstarch. Transfer the mixture to a saucepan and, stirring continuously, cook over low heat until you obtain a thick cream. Once the cream has cooled, incorporate the dissolved gelatin.

3. Preparing the mold: Take a large pot (5 liters) and line it with a damp cloth on the outside. This will help to release the cake later.

4. Assembling the cake: Quickly dip the ladyfingers in the peach syrup and arrange them along the sides of the pot. Place a heart-shaped mold (or any shape you desire) at the bottom of the pot and add a layer of frozen blueberries. Pour the prepared cake gel over them, replacing water with peach syrup. Place the pot in the refrigerator to allow the gelatin to set.

5. Vanilla cream: Whip the cream and gently mix it with the egg yolk cream. Pour half of the cream mixture into the pot after removing the heart-shaped mold. Add the peach slices, then the remaining cream and another layer of dipped ladyfingers.

6. Finalizing the cake: Prepare the instant vanilla cream according to the instructions on the packet, using condensed milk instead of regular milk. Add the vanilla essence, raisins (if using), and candied orange peel. Pour the cream over the ladyfingers, smooth the surface, and cover with a final layer of dipped ladyfingers.

7. Chilling: Cover the pot with plastic wrap and let the cake chill until the next day. This will allow the flavors to meld perfectly.

8. Serving: The next day, prepare a platter and carefully invert the cake. Remove the plastic wrap and decorate the cake with 400 ml of whipped cream, to which you have added a stabilizer. Let the heart shape of blueberries with cake gel show on top.

- It is important not to soak the ladyfingers in syrup for too long, as they can become overly soggy.
- You can add ground nuts or almonds to the vanilla cream for an extra texture.
- If you want to make the cake less sweet, reduce the amount of sugar or use more tart fruits.
